貝切り
　
貝柱といえば、昔は平貝（たいら貝、タイラギ）か青柳の小柱で、これらのすり身をさらしな粉に練り込んだ変わりそば。通称「有楽町更科」の藤村和夫元4代目主人の記録によると、平貝を生のまま下ろし金でおろし、粉の一割ほど混ぜ込むとある。
