磯切り

海苔をさらしな粉に練り込んだ変わりそば。「海苔切り」のことで色は黒。海苔をあぶった粉末を篩い、さらしな粉に練り込む。変わりそばの「黒」は海苔のほかに「胡麻切り」もあるが、どちらの材料も粉になじまずつながりにくく、そばを打つのが難しい。
