My Summer Minestrone

Ingredients

6 servings
  1. 1 LG Yellow Squash, sliced thick
  2. 2 . Cups of fresh or frozen Broccoli
  3. 2 cups sliced carrots
  4. Pkg. Of Trader Joe's Chicken Meatballs
  5. 3 garlic cloves chopped
  6. 2 cups Spinach
  7. 2 cups partially cooked Ditalini pasta
  8. 4 cups chicken broth2 cups of water 1/2 cup of Parmesan cheese
  9. 3 tbsp olive oil

Steps

  1. 1

    Add olive oil to pot hear for a minute add carrots and Broccoli saute for 4 mins add garlic

  2. 2

    Add Meatballs, add chicken broth cook for 15 minutes

  3. 3

    Add sliced Squash and Spinach and Dutalini an water, simmer for another 20 minutes

  4. 4

    Once carrots are cooked through add parnesan cheese and serve with favorite garlic sticks
