Add Cooksnap

500 grams russet potatoes, peeled and cubed 2inchx2inch
75 grams cheddar cheese, shredded
150 grams corn starch
1 teaspoon salt
1/4 teaspoon ground black/white pepper
Chives, thinly sliced

Steps

Put potatoes into a pot. Fill the pot with water until it covers the potatoes. Sprinkle some salt. Boil the potatoes until they are tender.

Drain the potatoes then mash them up with fork (or using a potato masher/a ricer).

Add the cheese, corn starch, salt, ground pepper and chives to the mashed potato. Knead them well until the dough comes together.

Take about a quarter of the dough then roll it into a rectangle (about 1/4 inch thick), then cut about 1/4 inch width. Do the same to the remaining dough.

Heat the oil in a deep fryer. Fry the potato sticks until golden brown.

These turned out great! I didn't have cheddar, so used fresh grated Parmesan cheese. I also baked these (400° for 7 minutes, flip, and 7 minutes on other side). They turned out crispy on the outside and creamy on the inside. Thank you for sharing!
