Abstract

The abattoir is positioned in the field, and after the animal has been slaughtered outside it, the carcass is suspended by the rear legs on an overhead rail which leads to a butchering bench. The carcass is then bled, and the head is severed. It is then transferred to a movable basket, its back downwards, and its front part pointing in the forward feed direction. The front hooves which have been partially severed but still remaining attached to the carcass are then locked in holders, enabling the carcass to be raised by its front legs away from the basket to enable the hide to be drawn off. The carcass is then turned with the front part being lowered and the rear part simultaneously raised and transferred to a conveyor track suspended in the rear part of the abattoir for further transport to a final processing station for removal of the entrails and stomach, the heart, lungs, liver and kidneys. It is then subjected to inspection, prior to transfer to a storage chamber.
