Abstract

1. A process for the charge-wise fermentation of wort to beer, in which yeast is added to the wort and in order to set the required oxygen content, oxygen or an oxygen-containing gas is fed to the wort, characterized in that an amount of 1 to 1.6 . 10**-3 Nm**3 of pure oxygen or a corresponding amount of oxygen-enriched air is fed to the wort per litre thereof.
