Cereal preparations.-A flaked cereal food is produced by treating the grains to toughen the bran and the outer layer of endosperm, milling so as to separate the bran and adhering endosperm in flakes, cooking at a temperature of 112‹ to 115‹ C. so as not to destroy the vitamines, drying. flaking under a pressure that will rupture the cells of the bran envelope, and re-heating at approximately the same temperature as before. The grain is washed and stored for an hour or so in a moist state and milled between corrugated rolls one of which one rotates from 2¢ to 3¢ times as fast as the other. The flakes thus produced are sifted free from the inner parts of the endosperm, leaving a product containing 65 to 70 per cent of bran and 30 to 35 per cent of adhering endosperm. This product, with or without the addition of salt and malt syrup, is cooked in a rotary steam cooker, dried, again sifted, and passed through smooth rolls pressed together by springs which for rolls 20 inches in diameter and 24 inches long, exert a pressure of about 30 tons. The flakes are then passed through an oven, which may have a temperature of 176‹-194‹ C., but the temperature of the flakes must not be allowed to rise above 115‹ C.
