短時間の均質処理を行うか、あるいは上記処理を適宜組
み合わせて繰り返し均質処理を行うかなどのいずれの微
粒化処理を用いてもよい。本発明で使用する原料は、乳
原料として牛乳、脱脂粉乳、無塩バター、クリーム等を
使用するが、これらの原料を脂肪率1.5 〜3重量%の範
囲で、無脂固形分としておおよそ8〜10.5重量%に調整
したミックスを用いる。本発明でミックスの脂肪率を1.
