Description of the Related Art In a conventional fryer, as a method for heating frying oil in an oil tank, there is a method in which a plurality of gas burners are arranged on the outer bottom of the oil tank and the oil tank is directly heated by the flame of the burner. (For example, Japanese Unexamined Utility Model Publication No. 1-12223 and Japanese Unexamined Patent Application Publication No. 4-92617) Further, as a device using an electric heater, a sheath heater is directly introduced into an oil tank to heat frying oil (Japanese Unexamined Patent Application Publication No. 3-251214). ), Or one in which a sheathed heater is disposed on the outer lower surface of an oil tank to cook fried food (Japanese Utility Model Laid-Open No. 4-93036).

The method of cooking fried food by burning gas has a problem of treating exhaust gas. That is, if the exhaust gas is discharged into the room, the working environment is reduced, and large-scale exhaust equipment is required to perform the outdoor exhaust. Further, since a large amount of air is consumed to burn the gas, it is necessary to introduce the air from the outside. Therefore, the equipment becomes large. Furthermore, in this combustion method, when exhaust gas is discharged outdoors, a large amount of heat is also released together with the exhaust gas, so that there is a problem that the thermal efficiency is low.

For this reason, it is necessary to change the oil frequently, which causes problems on the global environment such as treatment of waste oil and increases costs.

Absent. Further, due to the structure of the heater, the heater cannot be arranged on the entire lower surface of the oil tank, and the watt density of the heater is high. Therefore, the temperature near the heater is high, but the temperature is low at a position away from the heater. There is a problem that temperature unevenness occurs.

A plurality of flat heaters each composed of a foil-shaped electric heating element are arranged and arranged so that the heat-dissipating insulator contacts the substantially flat surface, and one or more holding plates are provided on the lower surface of these flat heaters. The holding plate is fixed to the outer bottom surface of the oil tank by a fixing jig at a substantially central portion in the longitudinal direction and by a sliding jig via an elastic body near the outer peripheral end.

Deformation can be prevented. Further, since the frying oil does not directly contact the high-temperature surface of the flat heater, the deterioration of the oil is slow, the frequency of oil replacement is reduced, the cost can be reduced, and global environmental problems such as waste oil treatment are reduced. An outer bottom surface 2 of the oil tank 1 is formed to be substantially flat, and a flat heater 3 shown in FIG. As shown in FIG. 3, the flat heater 3 includes a heat insulating insulator 4 made of mica plate, ceramic fiber, and the like, and a heat radiating insulator 5 containing aluminum nitride.
Ferrite stainless steel foil, nickel chrome foil,
It is configured with a foil-like electric heating element 6 having a high resistivity, such as an iron-chrome foil. The flat heater 3 has a heat-radiating insulator 5 facing the outer bottom surface 2 of the oil tank 1 and a heat-insulating insulator 4.
A stainless steel reinforcing holding plate 7 is placed underneath, and is fixed to the outer bottom surface of the oil tank 1 by a fixing jig 8 and a sliding jig 9 described later. Here, when the planar heater 3 is small, as shown in FIG. 3, one pressing plate 7 may be used for one heater, but when the planar heater 3 becomes large, FIGS. As shown in the figure, one flat heater 3 is fixed with a plurality of pressing plates 7. This is because, when the presser plate 7 becomes larger, the temperature difference in the presser plate 7 increases, and deformation and the like easily occur, and the temperature in the presser plate 7 is reduced by reducing the size of the presser plate 7 and using a plurality of presser plates. The difference is reduced to reduce the deformation.

When the energization of the flat heater 3 is continued and the temperature of the frying oil reaches a predetermined temperature, the temperature sensor 12 detects this and sends a signal to the control device 13, where the energization of the flat heater 3 is performed. Stop. By the above operation, the temperature of the frying oil in the oil tank 1 is maintained at a predetermined temperature. On the other hand, the foodstuffs 16 pass through the frying oil over time on the conveyor 14 to produce fried foods of uniform quality.

Therefore, there is no local heating and little thermal deformation at this bottom. However, the temperature of the holding plate 7 that pushes the flat heater 3 upward becomes high due to the heat generation portion of the flat heater 3 around the center fixing jig 8 and the outer peripheral end portion is away from the heat generation portion, so that the temperature rises. Also less. If there is a temperature difference in the heater holding plate 7 as well, heat is transferred by heat conduction. However, since this type of material is made of a material having higher strength and toughness than heat conduction (for example, stainless steel), heat is transferred. Generally, the conductivity is low. Therefore, when the shape of the holding plate 7 is enlarged, the temperature difference becomes large and the holding plate 7 is easily deformed. As a measure for preventing this deformation, in the present invention, the pressing plate 7 is divided and the flat heater 3 is pressed by a plurality of pressing plates 7, thereby reducing the temperature variation inside the pressing plate 7 and reducing the deformation.

Even if it is, it can be easily absorbed.

As a result, the flat heater increases its strength, and is constantly pressed against the bottom of the oil tank with a uniform force, and can easily absorb the thermal expansion when the temperature rises, improving the adhesion performance of the heater without causing thermal deformation. Thus, higher thermal efficiency can be ensured.
