【産業上の利用分野】本発明は、りんごを圧搾した果汁
に含有している澱(おり)を除去するためのりんご果汁
の澱除去方法に関する。

【従来の技術】従来、りんご果汁の澱(おり)除去は、
りんごを破砕して、これを圧搾してできたりんご果汁に
加熱して、浮遊している澱を単に網で掬ったり、または
濾過したりするやり方であった為、瓶詰めした時に濁り
があって透明度が低いものであったし、長期間保存する
と澱が析出して商品価値が低下した。これを防止するた
めに、りんご果汁に遠心分離器を使用して澱を除去する
方法があり、この方法は非能率的な作業工程となるが、
遠心分離器を使用すれば簡単に澱を除去することが出来
る。しかし、遠心分離器は高額なため、小規模でりんご
ジュースを加工している家内工業では上記方法を採るこ
とが出来ないので、それに代わる方法が望まれていた。

【発明が解決しようとする課題】そこで、本発明は、り
んご果汁を泡立てて、その泡に澱を付着させて網で掬う
ことによって簡単に澱を除去するりんご果汁の澱除去方
法を提供することを目的とする。

【課題を解決するための手段】そのため、本発明のりん
ご果汁の澱除去方法は、蒸気殺菌釜に投入されたりんご
果汁を加熱殺菌しながら90℃になった時点で、表面に
浮いてきた澱を40メッシュの金網で掬い、その後、高
速回転する泡立て器によってりんご果汁の表面全体を泡
立たせ、その泡に澱を付着させて200メッシュの金網
で掬う、この泡立て器によって泡立てる作業と200メ
ッシュの金網で掬う作業を繰り返すことによって、りん
ご果汁の澱を除去するものである。

【発明の実施の形態】以下、本発明の実施例を添付図面
に基づいて説明する。本発明のりんご果汁の澱(おり)
除去方法に使用される澱除去装置は、図1に示すよう
に、支持脚12に支持され、外周面に蒸気室2を設けた
蒸気殺菌釜1と、該蒸気殺菌釜1の蒸気室2に高温蒸気
を供給する蒸気パイプ3と、前記蒸気殺菌釜1の底面中
央に接続され、澱除去後のりんご果汁14を排出する輸
送パイプ4と、該輸送パイプ4の途中に設けた開閉コッ
ク5と、前記蒸気殺菌釜1の近傍に支持柱6を立設し、
該支持柱6の先端に固定された泡立て器7と、該泡立て
器7のエアードリル8に接続されたエアーホース9とか
らなる。また、蒸気殺菌釜1の内壁には、りんご果汁1
4の温度を検知するための温度センサー10が設けら
れ、温度調整及び温度表示装置11に接続される。さら
に、澱を掬うための40〜200メッシュの金網13を
用意する。
