一般に、このような配膳車は、厨房にて電源に接続して冷凍装置を作動させておき、食事を盛った給食用トレイを本体内に収容して冷却し、配膳時には、冷凍装置の電源を外して本体を給食場所まで移動させ、配膳後には再び厨房まで移動させるという使い方がされる。このため、冷凍装置の作動時に冷却器に付着した霜が配膳時に溶け始めることになる。
