排気口を有する焼成庫内に、上から順々に、食材上面焼成用の遠赤外線ヒータと、食材を載置して搬送する焼成用バーコンベアと、上面側に所要数の温度調整を可能にしうる遠赤外線ヒータを備え、かつ下面側に炭の点火および温度調整を可能にしうるガスバーナを備えた炭床を配設し、
前記焼成庫内の焼成用バーコンベアの搬送面近くに温度検知センサを設け、
前記温度検知センサが検知した焼成温度が一定の温度を下回ったときに前記遠赤外線ヒータに着火して前記焼成温度を補うように温度をコントロールする手段を設けたことを特徴とする炭火焼成装置。
