所定量の糖にイオン交換水を加え90重量部とし、加温(〜70℃以下)して糖を完全に溶解した。
<評価基準>
○・・・糖の析出を抑制していた
×・・・糖の析出は抑制できなかった
<結果>
表1に記載した結果の通り、糖と多糖類の特定の組み合わせにより糖の析出が抑制されることがわかった。
Claims (1)
- 高濃度のスクラロースを含む溶液にLMペクチン又はアラビアガムを含有させることを特徴とする、スクラロースの析出抑制方法。
