Claims (3)
- 家畜又は家禽に、バリンの含有量が1.2質量%以上であってイソロイシンの含有量が0.8質量%以下である飼料を、屠殺前10日以内から屠殺時まで継続的に給与することを特徴とする食肉中の遊離グルタミン酸の増加及び食肉の酸味の抑制方法。
- 前記飼料を屠殺前3日以内から給与することを特徴とする請求項1記載の食肉中の遊離グルタミン酸の増加及び食肉の酸味の抑制方法。
- 前記家畜又は家禽がニワトリであることを特徴とする請求項1又は2記載の食肉中の遊離グルタミン酸の増加及び食肉の酸味の抑制方法。
