Description
ここで、レバウディオサイド成分は、レバウディオサイドA、レバウディオサイドB及びレバウディオサイドDから成る群より選ばれる1又はそれ以上の化合物を含む、組成物を提供する。
定義
本発明において、語句「甘味ステビオール配糖体」とは、1以上のサッカライド残基が環上に化学結合した通常のステビオールジテルペン環系構造を有する天然化合物を意味する。
ここに開示されるのは、モグロサイドVと、レバウディオサイドA、B及びDのうち1又はそれ以上を含むレバウディオサイド成分との混合物は優れた風味特性を提供し、多くの場合、同程度の甘味料と比較して、レバウディオサイド成分又はモグロサイドVの何れか単独でも優れた効果を示すことである。幾つかの系では、pH約2〜pH約8において最も明確に風味の向上が示される。
詳細な研究の結果、現在では、ラカンカ(Luo Han Guo)抽出物中にある程度不純物が存在することにより、結果的に味覚試験者が「カビ臭い」と称する異臭をもたらすことが見出された。さらなるカビ臭及び他の異臭成分も存在し得るものの、特に芳香族配糖体及び半揮発性有機化合物が、当該望ましくない臭いを産生することが同定されている。ある特定の芳香族系配糖体は分子量502ダルトンを有し、特定のカビ臭い風味を産生することが明らかとされている。当該化合物は分子式C26H30O10に一致し、当該分子式を有する全ての化合物の全体が、幾つかの実施態様において本発明により限定される。当該化合物の十分に低濃度を達成させるための任意の手段は、本発明の目的のために適切である。ある1つの適切な方法は、モグロサイドV水溶液を、例えば、場合により精製且つ/又は濃縮されたラカンカ抽出物の形態で、粒状活性炭のカラムを通すものである。活性炭の他の形態として、例えば粉末を用いることができる。また炭素処理は、さらにカビ臭又はその他の異臭成分のほかに、残留農薬及び原材料において消費者にとって望ましくない物質も除去する。典型的には、炭素処理において水のみが担体として用いられ、有機溶媒は加えられない。幾つかの実施態様では、ラカンカ抽出物を、マクロ多孔性高分子吸着樹脂、イオン交換樹脂、及び活性炭素で処理される。典型的には当該処理はこの順番で行われるが、必ずしもそうでなくてもよい。あるマクロ多孔性高分子吸着樹脂の例として、商品名AMBERLITE(登録商標) XAD1180N、Rohm and Haas(Philadelphia, PA)より市販されている。適切なイオン交換樹脂の例では、アニオン性樹脂であって商品名AMBERLITE(登録商標) FPA90 CLとして、同じくRohm and Haasより市販されている。
レバウディオサイド-モグロサイドV混合物を含む甘味組成物は粒子系や物理学的形状を変更する公知の方法により生産されてもよい。凝集、スプレー乾燥、ドラム乾燥及びその他の物理学的製法のような方法を用い、より優れた流動性、吸湿性又は溶解性をもたらすために粒子径を調節してもよい。該組成物は液状で供給され、場合により1又はそれ以上
特定の用途において使い勝手の良い保存料及び/又は処理補助剤を含んでいてもよい。レバウディオサイド-モグロサイドV混合物を含む組成物は、甘味、用量、活性及び操作性が制御された製品を供給するために、マルトデキストリン及びその類似化合物のような、増量剤とともに製造されてもよい。
ダルコサイドA(dulcoside A),ダルコサイドB(dulcoside B)(ともにレバウディオサイドCとしても知られる)、ルブソサイド(rubusoside)、モグロサイドIII(mogroside III)、モグロサイドIV(mogroside IV),モグロサイドVI(mogroside VI)、シアメノサイド(siamenoside)、モナチン(monatin)及びその塩(monatinSS,RR、RS、SR)、クルクリン(curculin)、グリチルリチン酸(glycyrrhizic acid)及びその塩、ソーマチン(thaumatin)、モネリン(monellin)、マビンリン(mabinlin)、ブラゼイン(brazzein)、ハーナンダルシン(hernandulcin)、フィロダルシン(phyllodulcin)、グリシフィリン(glycyphyllin)及びフロリジン(phloridzin);
及び人工の高活性甘味料を含み、例えば:
サッカリン、アスパルテーム、スクラロース、ネオテーム、シクラメート及びアセスルフェームカルシウム、
が挙げられる。

Claims (14)
- ラカンカ抽出物を精製する方法であって、ラカンカ抽出物を活性炭と接触させることを含み、ここでモグロサイドVが乾燥固体基準でラカンカ抽出物の少なくとも40%を占め、活性炭との接触時にラカンカ抽出物が水溶液の形態であり、前記水溶液を、135〜185°Fの表面積100m2/g以上の粒状活性炭に一時間当たり流速1〜10床体積で通過させる、方法。
- 前記ラカンカ抽出物は予めマクロ多孔性高分子吸着樹脂と接触させたものである、請求項1に記載の方法。
- 前記ラカンカ抽出物は予めマクロ多孔性高分子吸着樹脂及びイオン交換樹脂の双方と接触させたものである、請求項1に記載の方法。
- 前記ラカンカ抽出物は予め、最初にマクロ多孔性高分子吸着樹脂と、次にイオン交換樹脂と接触させたものである、請求項1に記載の方法。
- 前記ラカンカ抽出物は予めアニオン性樹脂であるイオン交換樹脂と接触させたものである、請求項1に記載の方法。
- 活性炭と接触させる前記ラカンカ抽出物は水溶液の形態である、請求項1に記載の方法。
- 活性炭と接触させる前記ラカンカ抽出物の水溶液は予め、ラカンカ果物の粉末化乾燥抽出物を水に溶解させることにより、水溶液として調製されたものである、請求項1に記載の方法。
- 前記水溶液を精密濾過する、請求項7に記載の方法。
- 前記水溶液を前記の粒状活性炭のカラムに通過させて流出液を取得し、続いて前記流出液を濃縮する、請求項1に記載の方法。
- 前記流出液をエバポレーション又は膜濃縮により濃縮する、請求項9に記載の方法。
- ナノ濾過膜又は逆浸透膜を用いて前記流出液を膜濃縮する、請求項9に記載の方法。
- 濃縮に続いて前記流出液を乾燥させる、請求項9に記載の方法。
- 噴霧乾燥器又は噴霧凝集器を用いて前記流出液を乾燥させる、請求項12に記載の方法。
- 濃縮に続いて前記流出液を、レバウディオサイドA、レバウディオサイドB、レバウディオサイドD、ステビオール配糖体、及び精製ステビア抽出物からなる群より選択される1又は2以上の成分と混合し、次いで乾燥させる、請求項9に記載の方法。
