項2. さらにカカオバターを含む、項1に記載の煮沸ルウ。
項3. カカオ豆由来成分がカカオマスを含む項1に記載の煮沸ルウ。
項4. カカオ豆由来成分がココアパウダーとカカオバターを含む項1に記載の煮沸ルウ。
項5. 項1〜4のいずれか1項に記載の煮沸ルウを含む食品。
項6. カレールウ、ハヤシルウ、クリームシチュールウ、チャウダールウ、ビーフシチュールウ、パスタ用ルウ及びブイヤベース用ルウからなる群から選ばれるルウ製品、レトルトカレー、レトルトハヤシを含むレトルト食品、或いはブイヤベース、パスタソースを含む各種ソースからなる群から選ばれるいずれかである、項5に記載の食品。
項7. 煮沸ルウにカカオ豆由来成分を配合し、前記カカオ豆由来成分はカカオマス及び/又はココアパウダーを含むことを特徴とする、煮沸ルウを含む食品の風味増強方法。
項8. 前記風味が旨味の強さ、旨味の持続性及び/又は味の深みである、項7に記載の風味増強方法。
(1)煮沸ルウの製造
表1に示す配合量で煮沸ルウ成分として小麦粉、食用油脂、コーンスターチ、ガーリック、オニオンパウダー、並びに、深煎りカカオマス(実施例1)、浅煎りカカオマス(実施例2)、ココアパウダー(実施例3)、カカオバター(比較例1)及びカカオ豆成分無添加(比較例2)を混合して130℃に加温し、煮沸ルウを得た。
上記で得られた煮沸ルウを70℃に冷却し、カレールウ成分としてカレー粉、砂糖、食塩、畜肉ペースト、野菜・果実ペースト、調味料(アミノ酸等)、その他粉体原料を配合してさらに混合し、容器に充填し更に冷却して容器入りルウを得た。
煮沸ルウを含むカレールウを適量の水に加熱しながら溶解してカレーソースを作製し、5名のパネラーによりドリンク評価を行った。さらに、カカオマス無添加の煮沸ルウと実施例1〜3及び比較例2の各カレーソースについて揮発成分の分析をHP-SPME-GC/MS法により行った。ドリンク評価の結果を表2に示し、揮発成分の分析結果を表3に示す。

Claims (8)
- 食用油脂、小麦粉及びカカオ豆由来成分を含む煮沸ルウであって、前記カカオ豆由来成分はカカオマス及び/又はココアパウダーを含み、前記煮沸ルウはホワイトルウ、白ルウ又はブラウンルウである、煮沸ルウ。
- さらにカカオバターを含む、請求項1に記載の煮沸ルウ。
- カカオ豆由来成分がカカオマスを含む請求項1に記載の煮沸ルウ。
- カカオ豆由来成分がココアパウダーとカカオバターを含む請求項1に記載の煮沸ルウ。
- 請求項1〜4のいずれか1項に記載の煮沸ルウを含む食品。
- カレールウ、ハヤシルウ、クリームシチュールウ、チャウダールウ、ビーフシチュールウ、パスタ用ルウ及びブイヤベース用ルウからなる群から選ばれるルウ製品、レトルトカレー、レトルトハヤシを含むレトルト食品、或いはブイヤベース、パスタソースを含む各種ソースからなる群から選ばれるいずれかである、請求項5に記載の食品。
- 煮沸ルウにカカオ豆由来成分を配合し、前記カカオ豆由来成分はカカオマス及び/又はココアパウダーを含むことを特徴とする、煮沸ルウを含む食品の風味増強方法。
- 前記風味が旨味の強さ、旨味の持続性及び/又は味の深みである、請求項7に記載の風味増強方法。
