チョコレート製品の製造方法
Claims (15)
- 発酵またはインキュベートしたカカオ豆の処理方法であって、
発酵またはインキュベートしたカカオ豆またはカカオニブに水を加えて懸濁液を形成する工程と、
前記懸濁液を湿式粉砕処理する工程と、
前記懸濁液を70℃以下の温度での熱処理に付す工程と、
前記懸濁液を水相分(重質相)、脂肪相分(軽質相)および固相分に分離する工程と、ならびに
前記3つの相を個別に処理する工程とを含み、
前記分離する工程において、前記脂肪相分が主成分としてココアバターを、微量成分として固形分および/または水を含み、前記固相分がココア粉末および水を含み、
前記個別に処理する工程は、カカオ豆の発酵の間に形成されたか、またはカカオ豆のインキュベーションの前もしくはその間に形成されたかもしくは加えられた酢酸を、水相分内で中和すること、前記酢酸を水相分から除去すること、またはその両方を含み、
脂肪相分からココアバターを分離することと、
ココア粉末を固相分から分離することと、および
少なくとも水相分からココア香料およびポリフェノール粉末を分離することとを含む、
方法。 - 蒸留、抽出、エマルジョン型液体の膜分離、塩析またはこれらの組み合わせによって酢酸を水相分から除去する、請求項1に記載の方法。
- 前記水相分が、前記ココア香料およびポリフェノール粉末抽出物を得るために1または複数の濃縮工程に供される、請求項1または2に記載の方法。
- 濃縮工程の前またはその間に酢酸を水相分から除去する、請求項3に記載の方法。
- ココア香料およびポリフェノール粉末が、水相分および固相分から抽出される、請求項1〜4のいずれか一項に記載の方法。
- 芳香成分およびカカオ固形物を得るために、三相の分離後に乾燥機中で固相分を乾燥させる工程をさらに含む、請求項1〜5のいずれか一項に記載の方法。
- 乾燥機がドラム式乾燥機である、請求項6に記載の方法。
- 請求項6に記載の方法であって、前記乾燥機は、
固相分通過用の入口開口部および乾燥固相分通過用の出口開口部を有し、かつ円筒形状であって水平軸心を有する管状体と、
この管状体の両端を閉塞しているエンドプレートと、
加熱冷却するための同軸ジャケットと、
前記管状体内で回転可能に支持されたブレード付きロータとを備える混合装置であり、
ここで、前記ロータ上において前記ブレードは、らせん状の配置をとり、且つ、前記固相分を遠心しつつ前記出口開口部に向けて移送するための配向をとり、
前記出口開口部は、カカオ固形物を連続的に乾燥させ、芳香成分を分離するために乾燥生成物から香料相を分離するための装置と、ダクトによって連絡している、
方法。 - 前記カカオ処理工程が、非水溶媒を使用せずに実施される、請求項1〜8のいずれかに記載の方法。
- 前記カカオ処理工程の各々が、約70℃以下の温度で行われる、請求項1〜9のいずれかに記載の方法。
- 請求項1に記載の方法によって得られたココアバター、ココア粉末、ポリフェノール粉末およびココア香料の抽出物を含むチョコレート構築キット。
- チョコレートまたはチョコレート様製品を製造するための方法であって、前記方法は、
発酵またはインキュベートしたカカオ豆またはカカオニブに水を加えて懸濁液を形成する工程と、
前記懸濁液を湿式粉砕処理する工程と、
前記懸濁液を70℃以下の温度での熱処理に付す工程と、
前記懸濁液を水相分(重質相)、脂肪相分(軽質相)および固相分の3つの相に分離する工程であって、前記脂肪相分は主成分としてココアバターを、ならびに微量成分として固形分および/または水を含み、前記固相分はココア粉末と水とを含む、分離する工程と、ならびに
前記3つの相を個別に処理する工程であって、前記個別に処理する工程は、カカオ豆の発酵の間に形成されたか、またはカカオ豆のインキュベーションの前もしくはその間に形成されたかもしくは加えられた酢酸を、前記水相分内で中和すること、前記酢酸を前記水相分から除去すること、またはその両方を含み、前記脂肪相分からココアバターを分離すること、前記固相分からココア粉末を分離すること、および少なくとも前記水相分からココア香料およびポリフェノール粉末を分離すること、を含む、工程、
ココア香料抽出物をココアバター抽出物と再び合わせる工程、
前記再び合わせた抽出物を、前記ココア粉末抽出物、前記ポリフェノール粉末抽出物、および/または粉乳と混合する工程、ならびに
前記混合物をコンチングする工程
とを包含する、方法。 - 再び合わせた抽出物を少なくとも前記ココア粉末抽出物および前記ポリフェノール粉末抽出物と混合する、請求項12に記載の方法。
- 前記再び合わせた抽出物が、糖、甘味料またはカカオパルプとさらに混合される、請求項12または13に記載の方法。
- 請求項12〜14のいずれか一項に記載の方法によって得られるチョコレートまたはチョコレート様製品。
