Description
[新鮮な食用油における界面張力の測定]
・図4(a)に示すように、新鮮な食用油にオレイン酸10-3Mを添加しても、電場印加に伴う界面張力の変化がほとんど認められなかった。
・一方、図4(b)及び図5~図8、並びに図9~図12に示すように、新鮮な食用油にオレイン酸ナトリウム10-3Mを添加した場合には、電場を印加すると、界面張力の低下が確認され、界面張力の低下率は、水相のpHに著しく依存する。
・図4(b)及び図5~図8に示すように、pH7.2~7.4のリン酸生理食塩水を水相とした場合、交流電場を印加したのみでは界面張力の低下は認められず、直流電場を印加すると、界面張力の低下が確認される。
・一方、図9~図12に示すように、pH5.4~5.6の生理食塩水を水相とした場合、交流電場を印加したのみでも界面張力の低下が認められ、交流電場の周波数の低下に伴い、界面張力の低下率が増大する傾向が見られる。
・また、図11に示すように、pH5.4~5.6の生理食塩水を水相とした場合において、交流電場に+100Vの直流電場をオフセット電場として印加すると、60%以上の界面張力の低下が確認され、図12に示すように、交流電場に-100Vの直流電場をオフセット電場として印加しても、15%程度の界面張力の低下に留まった。

Claims (7)
- 少なくとも交流電圧を印加され、電磁場を物質に向けて発生させる少なくとも1つの電極と、
前記電極に印加する電圧を制御する駆動部と、
を備え、
前記電極に対向して配置された物質内の成分を制御する成分制御装置であって、
前記駆動部は前記電極に印加する交流電圧を、周波数500KHz以下(0KHzは含まない。)、電圧2000Vpp/cm以下(0Vpp/cmは含まない。)で制御することにより、前記電極から発生させる電磁場を調整し、該電磁場によって前記物質内の水分を連珠状に結合させるように制御する、成分制御装置。 - 前記電極から発生させる電磁場を調整し、該電磁場によって前記物質内の水分の水分活性を制御する、請求項1に記載の成分制御装置。
- 交流電圧に直流電圧をオフセット電圧として印加する、請求項1又は2に記載の成分制御装置。
- 前記物質内の水分は、結合水と、自由水と、に分けられ、前記物質内の水分のうち、前記自由水を連珠状に結合させる、請求項1~3のいずれか1項に記載の成分制御装置。
- 前記電極には絶縁被覆が設けられている、請求項1~4のいずれか1項に記載の成分制御置。
- 少なくとも交流電圧を印加され、電磁場を物質に向けて発生させる少なくとも1つの電極と、
前記電極に印加する電圧を制御する駆動部と、
により、前記電極に対向して配置された物質内の成分を制御する成分制御方法であって、
前記駆動部は前記電極に印加する交流電圧を、周波数500KHz以下(0KHzは含まない。)、電圧2000Vpp/cm以下(0Vpp/cmは含まない。)で制御することにより、前記電極から発生させる電磁場を調整し、該電磁場によって前記物質内の水分を連珠状に結合させるように制御する、成分制御方法。 - 前記電極から発生させる電磁場を調整し、該電磁場によって前記物質内の水分の水分活性を制御する、請求項6に記載の成分制御方法。
