3Lステンレスビーカーに水1200g、酢酸カルシウム一水和物(商品名:カルフレッシュ;大東化学社製)9.6gを投入し、65℃で3分間攪拌し、多価金属イオン溶液(カルシウムイオン濃度:0.18質量%)を得た。この溶液に国産乾燥もずく40gを投入後、65~70℃で20分間攪拌した後、遠心分離機(型式:HP-20XP;BECKMAN COULTER社製)で、5000rpm、15分の条件で遠心分離し、溶液を除去することで、1次処理済み褐藻類713.1gを得た。次に、3Lステンレスビーカーで水1000gに酢酸カルシウム一水和物(商品名:カルフレッシュ;大東化学社製)6.4gを溶解した多価金属イオン溶液(カルシウムイオン濃度:0.14質量%)に1次処理済み褐藻類全量を投入後、65~70℃で20分間攪拌した後、遠心分離機(型式:HP-20XP;BECKMAN COULTER社製)で、5000rpm、15分の条件で遠心分離し、溶液を除去することで、2次処理済み褐藻類775.9gを得た。次に、3Lステンレスビーカーに2次処理済み褐藻類全量、洗浄液として水700gを投入後、室温で3分間攪拌して洗浄し、遠心分離機(型式:HP-20XP;BECKMAN COULTER社製)で、5000rpm、15分の条件で遠心分離し、溶液を除去した。さらに、同様の洗浄操作を2回行った。この際除去した洗浄液中のナトリウム濃度を測定したところ0.005質量%未満であり、十分に洗浄できていることを確認できた。洗浄液を除去した処理済み褐藻類を真空乾燥機(型式:VOS-301SD;EYELA社製)で、65℃、17時間乾燥した後、超遠心粉砕機(型式:ZM200;RETSCH社製)で、14000rpm、スクリーン目開き0.2mmの条件で粉砕し、粉末状褐藻類16を27.5g得た。粉末状褐藻類16の水分含有量は3.9質量%であった。

Next, the entire amount of the primary-treated brown algae was added to a polyvalent metal ion solution (calcium ion concentration: 0.14% by mass) in which 6.4 g of calcium acetate monohydrate (trade name: Calfresh; manufactured by Daito Chemical Co., Ltd.) was dissolved in 1000 g of water in a 3 L stainless steel beaker, and then stirred at 65 to 70 ° C. for 20 minutes, and then centrifuged at 5000 rpm for 15 minutes with a centrifuge (model: HP-20XP; manufactured by BECKMAN COULTER Co., Ltd.) to remove the solution, and 775.9 g of secondary-treated brown algae was obtained. Next, the entire amount of the secondary-treated brown algae and 700 g of water as a washing solution were added to a 3 L stainless steel beaker, and then the mixture was stirred and washed at room temperature for 3 minutes, and centrifuged at 5000 rpm for 15 minutes with a centrifuge (model: HP-20XP; manufactured by BECKMAN COULTER Co., Ltd.) to remove the solution. Further, the same washing operation was performed twice. The sodium concentration in the washing solution removed at this time was measured and found to be less than 0.005% by mass, confirming that the washing was sufficient. The treated brown algae from which the washing solution had been removed was dried at 65°C for 17 hours in a vacuum dryer (model: VOS-301SD; manufactured by EYELA), and then pulverized in an ultracentrifugal grinder (model: ZM200; manufactured by RETSCH) at 14000 rpm and a screen opening of 0.2 mm to obtain 27.5 g of powdered brown algae 16. The moisture content of the powdered brown algae 16 was 3.9% by mass.

[粉末状褐藻類を含有する飲食品の作製]
(1)錠剤の作製
100gの粉末状褐藻類1と水79.5ml又は水119.2mlを混合し、顆粒状に成型後、打錠機を用いて直径8mm、0.25g/粒の錠剤を作製した。それぞれ、打錠前の前記混合物は継粉の発生が抑制されており、水分散性が良好であった。また、打錠障害の少ない錠剤を得ることができた。

強力粉150g、ドライイースト4g、牛乳120ml、バター6g、塩1g、砂糖2gを混合した後、生地を50gに分割した。生地50gに対して、1gの粉末状褐藻類1を混合し、発酵室にて40分間発酵させた後、一度、生地中の空気を除き、再度、20分間発酵させた。次に200℃のオーブンで13分間焼成し、パンを作製した。生地中に粉末状褐藻類が均質に分散したパンを得ることができた。

強力粉150g、薄力粉150g、塩15gを混合した。前記混合物100gに対して、2gの粉末状褐藻類1と水50mlを混合し、生地を2時間ねかせた。ねかした生地を麺棒で薄く伸ばし、幅3~5mmにカットした後、熱湯で5分間茹で、うどんを作製した。生地中に粉末状褐藻類が均質に分散したうどんを得ることができた。
