そして、これも限定されるものではないが、本発明に係る落花生薄皮含有食品組成物の用量を1日1回当たり5~10gとすると、上記範囲内としやすいため好ましい。

下記表1に示す原料を使用して、落花生薄皮含有食品組成物を作製した。
Example 1
A peanut skin-containing food composition was prepared using the ingredients shown in Table 1 below.
具体的には、まず、千葉県八街産落花生(品種:千葉P114号(Qなっつ))の莢殻から種子を取り出し、実(胚)と薄皮(種皮)とに分離した。そして、この落花生の実および薄皮をそれぞれファイバーミキサー(パナソニック社製、MX-X501N)にかけて粉末化した。なお、この粉末化においては、落花生の実は目開き0.6mmの篩を50質量%以上通過する粉末とし、落花生の薄皮は2回ファイバーミキサーにかけた後に目開き0.6mmの篩で仕上げてこの篩を全て通過する粉末とした。つまり、落花生の薄皮の粉末が目開き0.6mmの篩を通過する質量割合が、落花生の実の粉末が目開き0.6mmの篩を通過する質量割合よりも高くなるように調整した。さらに、高知県産の乾燥ショウガを粉末化したショウガ粉末(目開き0.6mmの篩を50質量%以上通過するもの)も別途準備した。 Specifically, seeds were first removed from the pods of peanuts (variety: Chiba P114 (Q Nattsu)) grown in Yachimata, Chiba Prefecture, and separated into the flesh (embryo) and the skin (seed coat). In this powdering process, the peanut flesh was powdered to pass through a sieve with a mesh size of 0.6 mm at 50% by mass or more, and the skin of the peanut was passed through the fiber mixer twice and then finished with a sieve with a mesh size of 0.6 mm to pass through the sieve entirely. In other words, the mass ratio of the powder of the skin of the peanuts passing through the sieve with a mesh size of 0.6 mm was adjusted to be higher than the mass ratio of the powder of the peanut flesh passing through the sieve with a mesh size of 0.6 mm. In addition, ginger powder (50% or more by mass passing through a sieve with 0.6 mm openings) made by powdering dried ginger produced in Kochi Prefecture was also prepared separately.
そして、これらを下記表1に示す質量比で混合し、その混合物粉末をアルミ蒸着プラスチックフィルムの小袋に小分け充填して密封し、サンプル1~3の落花生薄皮含有食品組成物を作製した。なお、サンプル1は1回分(7g)で落花生の実が約7.6粒分、落花生の薄皮が約37.8粒分(落花生の実の粉末100質量部に対して落花生の薄皮の粉末が12.4質量部)含まれ、サンプル2は1回分(7g)で落花生の実が約7.8粒分、落花生の薄皮が約31.5粒分(落花生の実の粉末100質量部に対して落花生の薄皮の粉末が10.1質量部)含まれ、サンプル3は1回分(7g)で落花生の実が約8粒分、落花生の薄皮が約25.2粒分(落花生の実の粉末100質量部に対して落花生の薄皮の粉末が7.9質量部)含まれる。 These were then mixed in the mass ratios shown in Table 1 below, and the mixed powder was divided into small bags made of aluminum-coated plastic film and sealed to prepare peanut skin-containing food compositions (samples 1 to 3). (実施例2)
実施例1で作製した3種類の落花生薄皮含有食品組成物を使用して、長期摂取による効果を確認した。

具体的には、主として50~70代の男女76名(被験者)を3群に分け、サンプル1の落花生薄皮含有食品組成物を摂取する群をグループ1(G1)、サンプル2の落花生薄皮含有食品組成物を摂取する群をグループ2(G2)、サンプル3の落花生薄皮含有食品組成物を摂取する群をグループ3(G3)とした。そして、それぞれについて、各サンプルを味噌汁やスープなどに添加する等の方法で1人・1日・1回・7g継続して摂取してもらい、摂取開始から3か月後(3か月摂取継続後)および5か月後(5か月摂取継続後)において以下の項目をアンケートした。 Specifically, 76 male and female subjects, mostly in their 50s to 70s, were divided into three groups: Group 1 (G1) took Sample 1, the peanut skin-containing food composition; Group 2 (G2) took Sample 2, the peanut skin-containing food composition; and Group 3 (G3) took Sample 3, the peanut skin-containing food composition. この結果を下記表2に示した。この結果から、サンプル1~3のいずれについても、長期の継続摂取により、便通改善効果、ダイエット効果、肌の保湿効果、目の老化予防効果などが発揮されることが示された。特に、3か月摂取継続後の結果と5か月摂取継続後の結果との比較から、ダイエット効果は、落花生の薄皮の含有割合がより高いサンプルを摂取したグループ1やグループ2において、長期摂取により効果を感じた被験者の割合がより高まっていた。また、便通改善効果は、どのグループでも長期摂取により効果を感じた被験者の割合がより高まっていた。
さらに、ショウガ粉末を含むことにより、発汗作用も発揮されることが示された。そして、これらのサンプルはいずれも、味噌汁やスープなどに添加しても違和感がなく且つ容易に摂取することができることも示され、つまり高齢者でも香味や食感などの点において非常に摂取しやすいものであることが明らかとなった。特に、サンプル3は香味、食感、機能の点においていずれも非常に優れたものであり、落花生の実の粉末と落花生の薄皮の粉末との配合バランスおよび性状が非常に良いものであることが明らかとなった。
The results are shown in Table 2 below. These results indicate that for all of Samples 1 to 3, long-term continuous ingestion exhibits effects such as bowel movement improvement effects, weight loss effects, skin moisturizing effects, and eye aging prevention effects. In particular, a comparison of the results after three months of continuous ingestion with the results after five months of continuous ingestion showed that the proportion of subjects who felt the weight loss effect was higher in Groups 1 and 2, which consumed samples with a higher content of peanut skins, after long-term ingestion. In addition, the proportion of subjects who felt the bowel movement improvement effect was higher in all groups after long-term ingestion.
Furthermore, it was shown that the inclusion of ginger powder also exerts a sweating effect. It was also shown that all of these samples can be easily ingested without any strange feeling when added to miso soup or other soups, which means that they are very easy to ingest even for elderly people in terms of flavor, texture, etc. In particular, sample 3 was very excellent in terms of flavor, texture, and functionality, and it was revealed that the blend balance and properties of the peanut powder and peanut skin powder were very good.

(2)前記落花生の実の粉末が千葉P114号の実の粉末であり、且つ前記落花生の薄皮の粉末が千葉P114号の薄皮の粉末である、(1)に記載の落花生薄皮含有食品組成物。
(3)前記落花生の薄皮の粉末が目開き0.6mmの篩を通過する質量割合が、前記落花生の実の粉末が目開き0.6mmの篩を通過する質量割合よりも高い、(1)または(2)に記載の落花生薄皮含有食品組成物。
(4)さらに、ショウガ粉末を前記落花生の実の粉末100質量部に対して1質量部以上3質量部以下含有する、(1)~(3)のいずれか1つに記載の落花生薄皮含有食品組成物。
(5)前記落花生薄皮含有食品組成物が、目開き0.6mmの篩を40質量%以上通過する粉末状食品組成物である、(1)~(4)のいずれか1つに記載の落花生薄皮含有食品組成物。
(6)前記落花生の実の粉末および前記落花生の薄皮の粉末を有効成分とする、便通改善用、ダイエット用、肌の保湿用、および目の老化予防用からなる群から選ばれる1以上の用途の食品組成物である、(1)~(5)のいずれか1つに記載の落花生薄皮含有食品組成物。
The present embodiment encompasses the following technical ideas.

(3) A peanut skin-containing food composition described in (1) or (2), in which the mass proportion of the peanut skin powder passing through a sieve with a mesh size of 0.6 mm is higher than the mass proportion of the peanut flesh powder passing through a sieve with a mesh size of 0.6 mm.
(4) A peanut skin-containing food composition according to any one of (1) to (3), further comprising ginger powder in an amount of 1 to 3 parts by mass per 100 parts by mass of the peanut fruit powder.
(5) The peanut skin-containing food composition according to any one of (1) to (4), which is a powdered food composition in which 40% by mass or more of the peanut skin-containing food composition passes through a sieve with an opening of 0.6 mm.
(6) The peanut skin-containing food composition according to any one of (1) to (5), which is a food composition having the peanut fruit powder and the peanut skin powder as active ingredients and having one or more uses selected from the group consisting of improving bowel movements, dieting, moisturizing the skin, and preventing eye aging.
