Description
又は米粉加工食品に適用できる。
・プリノイデス、サラシア ・チネンシス、サラシア・フルチコーサ、及び、サラシア・マクロスペルマ、並びに、キョウチクトウ科ギムネマ属のギムネマ・シルベスタ及びフトモモ科バンジロウ属のグァバの葉等を挙げることができる。従って、これらの抽出物、及び、抽出物に含まれる機能成分、特に、サラシノール、コタラノール、ネオコタラノール、ギムネマ酸、並びに、タンニン、カテキン、及び、プロアントシアニジン等の各種ポリフェノール等が、糖質吸収抑制機能を有する生体調整機能剤として用いることができる。また、植物の加工品である、蒸した大豆を塩漬けにして発酵、乾燥させた豆鼓、そのエキス、及び、その成分であるトリス(ヒドロキシメチル)アミノメタンも使用することができる。
・レティキュラータ、サラシア・プリノイデス、サラシア・チネンシス、サラシア・マクロスペルマ、サラシア・フルチコーサ、サラシア・オブロンガ等の根、茎、及び、葉、並びに、これらニシキギ科サラシア属植物の抽出物であることがより好ましく、サラシア・レティキュレータの根及び茎、並びに、その抽出物であることがより更に好ましい。また、生体調整機能剤として、ニシキギ科サラシア属植物の抽出物の中の機能成分である、サラシノール、コタラノール、及び、ネオコタラノールの中から選択される少なくとも一つ以上を用いることもできる。

- ニシキギ科サラシア属植物、キョウチクトウ科ギムネマ属植物、フトモモ科バンジロウ属植物、ブナ科クリ属植物、ブドウ科ブドウ属植物、アオイ科カカオ属植物、ウリ科トウガン属植物、キンポウゲ科オキナグサ属植物、セリ科ニンジン属植物、トチュウ科トチュウ属植物、バラ科ビワ属植物、及び、ツバキ科ツバキ属植物の粉砕物の水分が10質量%以下であり、前記粉砕物の長軸方向の長さが300μm以下である生薬及び伝承薬、並びに、ニシキギ科サラシア属植物及びキョウチクトウ科ギムネマ属植物の抽出物、並びに、サラシノール、コタラノール、ネオコタラノール、及び、ギムネマ酸である前記抽出物中の機能成分、並びに、ボグリボース、ミグリトール、フロリジン、及び、L-アラビノースである単糖類、並びに、アルカボーズ、キシロオリゴ糖、フラクトオリゴ糖、大豆オリゴ糖、イソマルトオリゴ糖、乳果オリゴ糖、ラクチュロース、ガラクトオリゴ糖、ラフィノース、及び、コーヒーオリゴ糖であるオリゴ糖類、並びに、難消化性デキストリン、ポリデキストロース、ガラクトマンナン、及び、ガラクトマンナンの分解物である多糖類、並びに、サイリウム種皮、ビール酵母、及び、寒天に由来する不溶性食物繊維、並びに、桿菌に属するラクトバチルス(Lactobacillus)、カルノバクテリウム(Carnobacterium)及びストレプトコッカス(Streptococcus)、球菌に属するラクトコッカス(Lactococcus)、エンテロコッカス(Enterococcus)、ペディオコッカス(Pediococcus)、テトラジェノコッカス(Tetragenococcus)、及び、ロイコノストック(Leuconostoc)である乳酸菌から選択される少なくとも一つ以上の生体調整機能剤と、小麦粉及び/又は米粉と、水とを含む混錬物であって、
前記混錬物中に、前記生体調整機能剤が均一に混合されており、
前記混錬物をドウ及びバッターに混合した際、前記ドウ及び前記バッター中に、前記生体調整機能剤が均一かつ容易に混合される機能を有することを特徴とする小麦粉及び/又は米粉加工食品用マスターバッチ。 - 前記生体調整機能剤を含有する前記小麦粉及び/又は米粉100質量部に対する前記水が10~90質量部であることを特徴とする請求項1に記載の小麦粉及び/又は米粉加工食品用マスターバッチ。
- 前記生体調整機能剤を含有する前記小麦粉及び/又は米粉に、前記水及び前記生体調整機能剤を含有する前記小麦粉及び/又は米粉を加えながら、三本ロール、ニーダー、バンバリーミキサー、押し出し機、及び、二軸押し出し機から選択される一つ以上の装置を用いた圧縮及び剪断により分散及び混錬し、最終的に、前記生体調整機能剤を含有する前記小麦粉及び/又は米粉100質量部に対する前記水が10~90質量部となるように、三本ロール、ニーダー、バンバリーミキサー、押し出し機、及び、二軸押し出し機から選択される一つ以上の装置を用いた圧縮及び剪断により分散及び混錬する工程を経ることを特徴とする請求項2に記載の小麦粉及び/又は米粉加工食品用マスターバッチの製造方法。
- 前記分散及び混錬する工程後に、カッターで裁断する工程、又は、凍結して粉砕する工程を設けたことを特徴とする請求項3に記載の小麦粉及び/又は米粉加工食品用マスターバッチの製造方法。
