(試験サンプル)
以下の試験サンプルを使用し、ジアセチル臭の消臭効果を試験した。

(マスターバッチの調製)
ジアセチルを流動パラフィンに溶解し(0.0001ppm、0.001ppm、0.01ppm、0.1ppm、1ppm、10ppm、100ppm、1000ppm)の溶液を準備し、それぞれ5gをひだ付きろ紙(直径185mm)に染み込ませ、500mlのビーカー内に入れた。ビーカーを10リットルのバック内に封入し、無臭空気で満たし、24時間室温で静置し6種のマスターバッチバックを調製した。

芳香袋から200ml分取し、無臭空気で満たした3リットルのバックについて、下記基準にて、各香料の快度又は不快度及び強度を評価した。値は、臭気判定士試験の嗅覚試験法(T&Tオルファクトメーター法)に合格して臭覚が正常であると確認された4名のパネラーの平均値を示す。結果を表3に示す。

(香料による悪臭の知覚試験)
上記で調製した悪臭袋を濃度の高いほうから順にパネラーに嗅いでもらい、ジアセチルの臭気だと判定できたものを〇、できなかったものを×として、認知できた悪臭袋番号をジアセチル臭気の閾値とした。

次いで香料の入ったサンプル袋を同様に悪臭濃度の高いほうから順にパネラーに嗅いでもらい、同様にジアセチルの臭気だと判定できたものを〇、できなかったものを×として、認知できた悪臭袋番号を香料混合空気のジアセチル臭気の閾値とした。値は4名のパネラーの平均値とする。結果を表3に示す。悪臭のみを嗅いだ時に感じる濃度(閾値)より、同様の袋に香料を添加した場合の閾値の方が高かった場合、香料が消臭(悪臭の認識)に寄与していると判断した。具体的には、臭気抑制機能として悪臭のみの閾値より2以上高かったものを◎、1以上高かったものを〇、1未満0以上を△、0未満を×とした。悪臭のみのものはコントロールのため臭気抑制機能を評価していない。 Next, the panelists were asked to smell the sample bags containing the fragrance in the same way, in order of increasing malodor concentration. The odor suppression function of the bag with only the malodor was not evaluated as it was a control.
以上の結果より、香料番号1~20の香料はいずれもジアセチルの臭気を感じにくくさせていることがわかる。特に、閾値の差があった香料番号1~17については、著しくジアセチルの臭気を感じにくくさせていることがわかる。また、強度の高い香料は用途が限定されるが、強度が低く、臭気抑制効果が高いプロピオン酸トリシクロデセニル、ネロール、メロナール、リリアール、ゲラニオール、シクラメンアルデヒドは特に好ましいジアセチル臭抑制剤といえ、種々の用途で使用することが期待される。 The above results show that fragrances No. 1 to No. 20 all make the odor of diacetyl less noticeable.
