てしまうという性質を持っていることから、第1の通気
発酵タンクから第2の通気発酵タンクへ発酵液を移動す
る際にはなるべく吐出流量の大きな発酵液移動ポンプを
用いて速やかに移動して発酵液中の溶存酸素濃度をある
程度以上保持させつつ移動を完了することが重要である
わけであり、それと同時に第2の通気発酵タンクでは第
1の通気発酵タンクから発酵液が移動され始めると直ち

冷却及び潤滑剤としての役割を果たすようにすることに
より発酵槽内が空の状態から攪拌翼を回転させつつ原料
醪もしくは発酵液を送り込んで発酵を行なわせることの
できる自吸式攪拌翼を用いた下部攪拌型通気攪拌式食酢
