The outline of the manufacturing method according to this publication is a strip-forming process in which the kneaded material is rolled out into a thin strip, the surface is soaked overnight and then cut into strips, and the strips are left in the air to control moisture distribution. It is manufactured through three steps: an adjustment step of averaging, and a winding and shaping step of intermittently blowing steam onto the strip and then winding it up. The overrolled koji obtained by the above method has a shape similar to a spiral spring with only a small number of turns, and is dry, brittle, and bulky, and easily crumbles during packaging or transportation. Therefore, the above defects can be solved by further crushing the over-rolled product to transform it into a fan-flat shape, but at the same time, it is possible to solve the above-mentioned defects by throwing the rolled-up product into a fan-flat shape. At the time, it was requested that it be restored to its round, over-curled state. In order to meet this demand, we produced the molded overmaki koji using the previously disclosed technology and crushed it into a flat shape while it was still soft. Although it is not as good as it is, it does not recover to a large extent and becomes the specified thinness, and cracks appear at the inverted part when crushed, and even if it is placed in hot soup, it does not return to a round shape, so Kohei's (Nama) It swelled and spread.
Therefore, as a result of further research and various experiments on the above-mentioned method, this invention can be molded flat to the required thickness without cracking, and can be restored to its round shape when placed in hot soup. This method has successfully produced a flat-shaped over-rolled rice cake. The characteristics of this method are that between the strip koji molding process and the rolling shaping process, the strip of paper is compressed while equalizing the distribution of moisture within the grain. By softening the strips of lacquer with steam and compressing it again before rolling it in, it is possible to flatten the fan very well, and the equipment that implements the method with the above characteristics can be used continuously and almost like an assembly line. It is constructed in such a way that it can be produced in large quantities.

As explained below from the examples of the production method according to the present invention, the kneaded product made by mixing powdered activated glycene and wheat flour with water has the softness and stickiness of freshly malted rice cake.
This is stretched in one direction to form a thin strip with about 2 to 3 sides, and while it is sequentially placed on a flat plate containing moisture and transferred to one side, a heater such as gas or electric heat is used to cut the length of the strip. The top surface is baked, and then the strip is cut perpendicularly to its longitudinal direction to obtain a strip bag with a diameter of about 70 to 80 mm.

Following the above-mentioned strip forming step, an adjustment step is added to allow the moisture in the strip koji to penetrate into the competitive skin layer. This process can be done by leaving the Tanzaku Tsuyoshi in the air, but in order to obtain Torahira-shaped overmaki koji that does not cause cracks and has resilience, it is necessary to perform this step.
Then, the strips of koji are layered on a heating plate, and the strips of koji are compressed several times, and the position of the strip of koji is changed to make the structure of the strips more delicate, and the unbaked surface is heated. ) A process is performed to mold the hardened thin skin to prevent it from adhering to other surfaces. Next, the adjusted strip is finally blown with steam to the extent of about 1 ounce of sand, and then a preliminary winding process is performed in which it is compressed again. When the prepared strip is finally sprayed with steam, it becomes soft and elastic, like rubber, and when it is compressed, its viscosity becomes higher than before compression. The strips obtained in this way are then rolled and shaped. First, the strips are sprayed with steam for about 40 minutes, and as the spraying time elapses, they are sequentially bent in the middle direction with the bran-coated side facing outward, forming a C-shape. When the diamond is bent into a C-shape, the steam is cut off and the diamond is rolled into an over-roll shape while applying pressure. It is used to crush the material into a fan flat and blow air into the cylindrical inner cavity to cool it. The fan-shaped overmaki koji produced here is cut into the required size and then dried. As shown in the drawings, an embodiment of the apparatus for carrying out the above-mentioned method is constituted by a strip forming device 1, an adjustment device 10, a winding preliminary device 16, and a winding shaping device 22, and the strip bush forming device 1 includes: A hopper 3 is provided above the starting end of the first conveyor 2 to feed the dough, and as the ram 4 descends, the dough is extruded from the bottom of the hopper 3 into a strip, and a pair of forming rollers 5 are used to thinly spread the dough. . A plurality of gas or electric heaters 8 are arranged above the middle part of the first conveyor 2, and the time it takes from being pushed out of the hopper 2 to reaching the end of the first conveyor 2 is approximately 1 minute to 1 minute 3. During this time, burn the top surface of the band-shaped bush A until it becomes a fox-colored color.

In addition, the coarsely wound portion is formed by a pair of opposing endless belts 28, 2.
9 is brazed so that the interval between the inlets is wide and the outlet is narrow, and the outlet is tilted downward.
In addition, driving force is applied only to the lower endless belt 28. Furthermore, the finely wound portion is integrated with endless belts 30, 3 similar to the coarsely wound portion.
1 are rolled horizontally and parallel to each other, and only the endless belt 30 on the lower side is given a turbulent force to rotate faster than the belt 28 in the coarsely wound part, and a fan-flat shaping part is provided following this. In this method, a pair of endless belts 32 and 33 are rolled up and down parallel to each other, and on the sides where both belts 32 and 33 lean toward each other,

Next, while the strips of diamond BI are sent by the second conveyor 11, the compression and displacement are repeated, and the strips of koji B2 that have passed through the auxiliary rollers 14 are cooled down. Next, Tanzakuogi B2
When supplied to the third conveyor 18, it is softened by steam and compressed again. This strip B3 is transferred to the fourth conveyor 2.
If the unbaked side of the packet 27 of 4 is placed sideways in the direction of movement of the conveyor 24, as the steam blowing time passes, the baked side will gradually turn out and it will curve naturally.
When it comes out of the steam chamber 26, it is transformed into a C-shaped hair C, and is further inserted between both endless belts 28 and 29 of the coarsely wound part, and in between, it becomes a large overwound part D, and then the endless belt of the next finely wound part. 30 and 31, it is shaped into a thin overwound E. At this point, the overwound E still retains its flexibility, and is fed between the endless belts 32 and 33 of the fan-flat shaping section.
It is crushed according to the adjusted interval between both regulating plates 34 and 35, and while being crushed, air is inserted from the side into the square-shaped over-wound cover F, so that each rolled-up piece is They are flattened without completely adhering to each other, leaving gaps between them. It should be noted that since the flat over-rolled rectangle F' produced in step (a) is rolled up, it has a cylindrical shape, which is then cut into a predetermined size.

As described above, in the method according to the present invention, the strip obtained in the strip forming process is compressed while being transferred while being placed on a heated slope, and the position of the pupil is displaced. The time for the water to divide into equal parts is shortened, and there is no risk that the unattached side of the strip will stick to the heating plate surface due to the displacement, and during the displacement, the non-seized side will come into contact with the air and Since a thin skin is placed on the surface, the densified strips of koji will not swell due to moisture during the next process.
It is compressed and maintains good moisture distribution.

In addition, in the pre-rolling process, since the koji is softened with steam and compressed again, the fineness of the koji molecules is further increased, and the above-mentioned two compression processes prevent cracks in the fan-flattened overroll. Experiments have also shown that it no longer forms, and that it immediately expands into a round shape when placed in hot soup. In addition, during the wrapping and shaping process, when crushing into a fan flat, air is blown into the overwrap*, so the rolled pieces do not stick together, which is also a factor that speeds up the restoration mentioned above. As a result of these factors, we can provide an extremely good product. Furthermore, since the manufacturing apparatus according to the present invention is conveyed by a conveyor in a predetermined shape and sequentially performs the necessary processing, it is almost produced in an assembly-line manner, and in particular, it is difficult to make adjustments. Since the apparatus performs compression and displacement by rotating a plurality of compression rollers on the belt faster than the conveying speed of the belt, the structure is simple and the processing speed is extremely shortened.

[Scope of Claims] 1. Following a forming step in which the kneaded wheat is sequentially rolled into thin strips, placed on a flat plate containing moisture, and transported, the upper surface of the belt-shaped wheat is baked and then cut. An adjusting step of moving the strip of wheat obtained in the step onto a heating plate, compressing the strip of wheat during that time, and displacing the support position relative to the heating plate to approximately equalize the distribution of moisture within the strip of wheat; A preliminary winding step in which the strip of wheat obtained in this step is sprayed with steam and then compressed to densify the structure, and the strip of wheat that has gone through this step is again sprayed with steam,
A method for producing flat-shaped over-wrapped gyu, which is characterized by adding a shaping step of cutting off steam and rolling it into an over-wound shape when it starts to roll naturally with the baked side facing outward, and then crushing it into a flat shape. 2 A strip pastry forming apparatus 1 equipped with a hopper 3, a forming roller 5, and a water spray pipe 7 above the starting end of the first conveyor 2, a heater 8 arranged in a row in the middle part, and a cutting device 9 provided at the terminal end.
The conveyor 1 is placed above the second conveyor 11 to be heated.
an adjusting device 10 including a plurality of compression rollers 13 that rotate at a peripheral speed faster than the moving speed of the third conveyor 1;
8, a steam chamber 20 is provided in the fourth conveyor 24, which has a winding preliminary device 16 continuously equipped with a compression roller 21 at the terminal end, and a V-shaped mesh bucket 27.
6, and a pair of endless belts 28 and 29 that are connected to the conveyor 24 and wound in an overwound manner facing each other are provided by rolling, and the same pair of endless belts that are crushed flat following the endless belts 28 and 29 are provided. 32, 33, and a winding and shaping device 22 which supports regulating plates 34, 35 on the back surface of the side where the endless belts 32, 33 approach each other so that the gap between them can be adjusted.
