いう)を最終的な形に整える整形工程がある。こ
の工程においては、第1図に示すように、対にな
つたローラ2間に中間醗酵機で醗酵を終えた生地
Aを取出口4を通つて投入することにより円形薄
状に圧延する整形機1が使用されている。そし
て、この整形機1によつて円形薄状に整形された
生地C′は、コンベア8と転圧板12によつて円
筒状に巻いたり、或いは円形薄状の生地C′の上
に餡、クリーム等を置いて包み込んで所定製品形
状に整えられて次工程に送り出されているが、こ
の整形機1に投入される生地Aの形状は、分割機
によつて分割された際の形状即ち丸味をおびた塊
状をなしているので、整形機1によつて圧延され
た後も円形薄状を有するのである。しかしなが
ら、製品によつては細長薄状に整形する必要のあ
る場合があり、従来においては、この必要性に対
処するためには、対となつているローラ2の間隔
を小さくしてローラ2間に生地が喰い込む際の抵
抗により出来るだけ巾広く圧延したり、或いはコ
ンベア8と転圧板12の間隔距離を狭くして生地
C′を円筒状に巻く際に強く押えて生地C′を巾方
向に延ばしたりするようにしていたが、このいず
れの手段も生地に無理な外力を加えることにな
り、製品品質方向上の観点からは好ましいことで

ル2間に投入することにより細長薄状に整形され

すると、整形機1の上方開口部7に投入される。
このとき、細長な棒状の生地Bの長手方向は整形
機1のローラ2の中心軸方向と一致するようにし
て投入されるので、生地Bは整形機1内の最上段
の一対のローラ2間の谷間に横長に嵌り込み、ロ
ーラ2の回転に伴つて次第に細長薄状に圧延され
て整形機1からコンベア8上に排出される。従つ
て、整形機1から排出された生地Cは、ローラ2
の中心軸方向に細長薄状に整形される結果となる
のである。第4図はこのようにして整形された生
地Cを、第3図の従来法によつて整形した円形薄
