おいて瘤状をなしその上靭帯や軟骨と複雑に結合
しているため、次記のような技術的困難が有る。
即ち、 (イ) 鋭利な剛体の動力刃物を用いて脱骨作業を行
なうと、刃物で骨の1部を削ぎ落としてしま
い、骨片が食肉中に混入する虞れが有る。
