本発明は両面焼等グリルにおいて下面の焼むら

両面焼グリルの下バーナは被加熱物下面の均一
な焼け具合と滴下する液汁による目づまり、燃焼

させないことが要求されている。特に後二者に対
する要求が強く、これらを満足し焼むらをどこま
で解消し、おいしい焼物が出来るかがポイントに
なつている。そのために従来は第1図のごとくバ
ーナをグリル庫内側面壁内に収納し、火炎のみを
吹出すという方式がとられている。このようにす
れば炎孔部への液汁の滴下はなく、又滴下した液
汁がふれ発煙する高温部もないため前述した三つ
の課題の後二者は満足する。ところが庫内側壁に
加熱用火炎が形成されるため被加熱物下面の熱分
布がむずかしくなる。その1つの方策として従来
考えられているものを第1図に示す。バーナaに
形成された被加熱体下面加熱用火炎bは熱気流拡
散体cにより庫内中央方向にガイドされ集めら
れ、その広がりにより焼網部(被加熱体)全体に
広がり熱分布の均一化を図つている。しかし現実
にはバーナと被加熱物との高さの差は40〜50mmに
満たず均一化はむずかしく、裏返して焼いた方が

込まれている。この本体1内には下部両側に上向
き火炎2及び内向火炎3,4を形成するグリルバ
ーナ5が装着されている。前記上向火炎2は庫外
壁6と庫内壁7で囲まれ庫外壁上端に形成された
輻射体8を加熱する。9は前記庫内壁7に係止さ
れグリル庫内10に被加熱物11を載置する焼網

ことである。実験によれば炎孔間の火移りがスム
ーズでない炎孔ピツチをもたせた場合でも庫内中
央部では焼ムラに対し問題とならない熱分布が得
られている。これは下方からの熱量としては表面
のみがこげるため大きな熱量を与えることが出来
ないことから長い火炎を十分の間隔(庫内寸法に
より異るが10〜20mmが良い)をもたせて配置する
ことが出来、従来と変らない熱量で庫内中央部近
辺を略均一な熱分布とし得る。しかし長い火炎を
形成することは逆に周辺部には熱流が不足するこ
とになるとともに炎孔13間ピツチが大きいこと
より火移りがむずかしくなる。これを補うのが小
さな孔炎14でありその効果は上記説明からも明
確である。尚、これら炎孔面積比率、ピツチなど
は庫内条件などにより実験的に求めるべきであ
