は、そのまま用いると緩慢冷凍になつて品質を損
ねる欠点があるため、それ自体でのチルド保存は
不可能である。本発明はその欠点を解消して有効
なチルド保存を実現するために、新規な提案を行
ない具体化したものである。その原理は、一時的
に冷凍冷気を利用して急速冷却し、チルド低温に
到達したことを検知して、その冷凍冷気を排除す
ると同時にチルド冷気に変換するもので、食品の
冷凍温度よりわずかに低いチルド保存温度に素早
く固定化し、品質低下を招かないようにするのが
目的である。
