Description

【発明の詳細な説明】[Detailed description of the invention]

本発明は生切餅の効果的な保存方法に関する。 生切餅は餅をたきあげ固化した後切断し、プラ
スチツク包装されたものであり、レトルト餅や真
空殺菌(熱湯殺菌)餅と異なり熱を加えていない
ので餅本来のおいしさを持つている。しかし、加
熱殺菌されていないため日持ちが悪く、とりわけ
カビ発生が速く、カビ防止のため数々の方法がと
られている。例えば真空包装、炭酸ガス包装等で
ある。しかしながら真空包装や炭酸ガス包装は操
作が煩雑で能率が悪く、かつ白いカビ状斑点が発
生し切餅の風味と商品価値を低下させるという欠
点があつた。 そこで本発明者らは、これらの欠点を克服すべ
く種々検討した。そして操作性の簡便な脱酸素剤
包装を試みたところ、脱酸素剤包装でも長期間保
存するとやはり白いカビ状斑点が発生することを
知つた。そして脱酸素剤包装切餅に発生する白い
カビ状斑点を詳細に観察した結果、酵母菌のコロ
ニーであることを確認した。またそれらの酵母菌
の生態を検討したところ、酵母菌の生育初期にお
いて、少量の炭酸ガスが生育を促進することを確
認した。 本発明はこれらの知見に基づくものであり、従
来の炭酸ガスの静菌作用を利用したCO2包装とは
異なり、全く逆の発想により、炭酸ガスを除去す
ることにより酵母の生育を抑制する方法である。
すなわち本発明は生切餅を脱酸素剤及び炭酸ガス
吸収剤と共に実質的に非通気性の包材もしくは気
密容器内に密封し保存することを特徴とする生切
餅の保存方法である。 脱酸素剤としては鉄、炭化鉄、第二鉄塩などの
鉄系、ハイドロサルフアイト、亜硫酸塩、硫化物
などのその他の無機系、ヒドロキノン、カテコー
ル、没食子酸などのポリフエノール類、グルコー
スなどの糖類、アスコルビン酸、エリソルビン酸
などのヒドロキシル化合物類、などの有機系のも
のがすべて使用しうるが、炭酸ガスの発生の可能
性のないもの、特に鉄粉と電解質からなるものが
好ましい。 炭酸ガス吸収剤は密閉系内の炭酸ガスを吸収し
うるものであればよく、例えばKOH、NaOH、
Ca(OH)2、Mg(OH)2等で例示されるアルカリ
金属又はアルカリ土類金属の水酸化物があげら
れ、これらはそのまま、あるいは濃厚溶液として
適当なフイラーに含浸させ、あるいはこれらの表
面を微粉末で被覆し、通気性のよいフイルムに充
填し密封して用いる。炭酸ガス吸収剤は脱酸素剤
と同一パツク内に充填してもよく、別袋として脱
酸素剤と併用してもよい。 本発明によれば従来の生切餅の保存、流通形態
を改善し、かつ長期間の保存が可能である。すな
わち従来脱酸素包装生切餅に酵母の白いコロニー
が発生するため、流通日数を限定したり、低温
(15℃以下)流通に乗せる必要があつたが、本発
明によれば、コロニー発生を抑制することによ
り、流通日数を延ばし、かつ低温流通の必要なく
常温で流通させることが可能である。 実施例 1 A社製生切餅500gを鉄系脱酸素剤、7.2g(三
菱瓦斯化学製、商品名、エージレスS―200)、及
び通気性包材で包装した水酸化カルシウム7.5g
と共にKOP/PEの袋内に密封し25℃で保存し
た。その結果を、脱酸素剤、水酸化カルシウムの
それぞれ単独使用、及びブランク(単なる含気包
装)と対比して第1表に示す。

In addition, when the ecology of these yeast bacteria was investigated, it was confirmed that a small amount of carbon dioxide gas promotes the growth of yeast bacteria in the early stages of growth. The present invention is based on these findings, and unlike conventional CO 2 packaging that utilizes the bacteriostatic effect of carbon dioxide gas, the present invention is based on a completely opposite idea to a method of suppressing yeast growth by removing carbon dioxide gas. That is, the present invention is a method for preserving raw rice cakes, which is characterized by storing raw rice cakes sealed together with an oxygen scavenger and a carbon dioxide absorbent in a substantially non-porous packaging material or an airtight container. Oxygen scavengers include iron-based agents such as iron, iron carbide, and ferric salts, other inorganic agents such as hydrosulfites, sulfites, and sulfides, polyphenols such as hydroquinone, catechol, and gallic acid, and glucose. All organic compounds such as sugars and hydroxyl compounds such as ascorbic acid and erythorbic acid can be used, but those without the possibility of generating carbon dioxide gas, especially those made of iron powder and electrolyte, are preferred.
