凹部4はポンプ3へパイプ6を通じてつながつて
おり、ポンプ3によつて洗浄液又は水を循環させ
る様にしている。7は凹部4に溜めた洗浄液に空
気を圧送して泡を発生させるための加熱装置を有
する送風機で、通路には弁8を設け液体が逆流し
ない様にして泡発生装置を構成している。9は洗
浄槽10の上方に設けた空気ぬき穴で、過剰に発
生した泡も排出される。14は排水用のポンプで
ある。なお11,12,13はいずれも被洗浄食

ける。そして洗浄槽10に充満し終ると発生する
泡の量に応じて泡が空気ぬき穴9から外部へ排出
される。この泡予浸において、被洗浄物11,1
2,13は高濃度の洗剤を含んだ泡と接触し、汚
れが落とされたり、又泡が破裂して食器に高濃度
の洗剤が付着し、その化学的作用で汚れを落した
り、その結合を弱めたりする。又泡は他の予浸
(浸漬など)と違い、常に膨張したり、移動した
り破裂したりしているため、いくらかの機械力も
発生しており、泡予浸においては汚染物の結合付
着力はかなり弱められる。次にこの洗剤液を排
出し、かわりに洗剤(消泡性のある洗剤)と水
をB面まで入れ、発熱体5で加熱しながらポンプ
3を作動させてノズル1,2より洗剤液を噴出
させ、被洗浄物11,12,13にぶつけること
により、化学力と機械力で汚れを完全に落す本洗

になり、その上、食器へも強固に付着して落ちに
くい汚れとなつている。この変性したタンパク質
汚れを落とすために、本洗い工程の温水に洗剤を
加えたり、又、洗剤液の噴射力を強める機械力
(噴射の圧力、水量など)も強いものが必要であ
つた。この様に洗浄の時間を少なくするために行
なつている高温予浸が、洗浄時間をかえつて長く
している。これは逆に言えば、変性させたタンパ
ク質汚れがなければ本洗い工程の洗剤をなくし、
さらには機械力も膨潤したデンプン質汚れを落と
す程度に軽減でき、さらには洗浄時の水温もほと

に従い、食器に付着しているデンプン質汚れの膨
潤も進み、油脂汚れも融解してくる。この泡予浸
の終期にはタンパク質汚れ、油脂汚れは洗浄さ
れており、膨潤したデンプン質汚れとほとんど付
着力のない固体汚れのみが残つている。以上が泡

て機械力で洗浄する本洗いを加えたので泡予浸時
の洗浄能力を高め、本洗い工程における機械力
(水の噴射力、水量)の軽減がはかれ、さらには
本洗い工程の洗剤を必要としないという効果があ
り、省エネルギ、省資源、公害面からみて工業的
