性魚例えば鰯、鯖、鯵等を自動的且高速で切断解
体する加工方法及びその装置に関するものであ

ウオータージエツトカツタを組込み、自動的且高
速にて処理し加工工程中における温度変化、鮮度
低下を回避すると共に廃水を可及的に僅少ならし
める新規な加工方法及びその装置を提供せんとす
るもので、以下図面に示す実施例に基づいて説明

し、魚を一列縦隊に並べて次の方向整列用パン形
コンベア4に送り込まれる。31は選別機を示
し、例えば特殊回転ブラシを用い、これにより所
定魚以外のものは排出せしめる。上記コンベア4
は頭尾を検知し一定方向に揃えるようにしたもの
で、検知手段としては、例えば頭部尾部の重量差
を利用し中央を支持した天秤式による選別、その
他光電管方式或いは頭部尾部の厚さの相違を利用
する等の検知手段を用いることができ、頭部尾部
の方向を揃えて次のコーン形ターンテーブル5に
供給する。このターンテーブル5は上面に魚9を
一匹づつ収納する多数の区画壁51を備え、魚が
自重により外方へ滑り落ちる如く適宜の傾斜面と
し、且外周には魚の頭部長を隔てて位置決め枠5
2が設けられ、魚9は図示の如く頭部91を位置
決め枠52に当接定位せしめる。このターンテー
ブル5の適所にはウオータージエツトカツターW
1が配備され、テーブル5の回転に伴い魚9は該
カツターW1により頭部91が切断される。切断
された頭部91は下方に配置した頭部送りコンベ
アC1上に落下し、冷凍室或いは適宜の処理場に
運ばれる。頭部を切断された身部92は自重によ
り位置決め枠52側に押し付けられ、テーブル5
の回転に伴い移行し、上記枠52の切欠部53に
於て下方の割身用コンベア6上に移行される。こ
のコンベア6は左右対をなす無端コンベアベルト
61,62、底部搬送用無端ベルト63並びにこ
の底部搬送用ベルト63の先端に配備される底板
64とを主体とし、身部92は両コンベアベルト
61,62に挾まれて移行するが、この場合背部
を上方に腹部を下方にして挾持すべく適宜の上下
選別手段66をコンベア6の受入部65に配備す
る。この選別手段66は例えば背部と腹部との硬
さ、又は厚さの相違或いは両者の比重差を利用し
て行い、適宜の転倒装置を設けて背部を上方に位
置せしめて両コンベアベルト61,62間へ供給
する。この割身用コンベア6の適所には三枚おろ
しのための対をなすウオータージエツトカツター
W2,W3及び臓物排出用ウオータージエツトW
4を配備し、カツターW2,W3により魚の身部
92を左右の割身93,94及び中骨95に切断
し、該カツターより吐出圧力の少いウオータージ
エツトW4の噴出水流により臓物96を押し排出
せしめる。尤もこの臓物排出用のウオータージエ
ツトW4は後述するウオータージエツトカツター
の如き水圧を必要とせず所要の水量を吐出する噴
出ノズルで差支えなく、分離装置67に配備する
ことが好ましい。この分離装置67は底部コンベ
アベルト63の先端に設けられた底板64に穿設
された細長の中骨排出用の切穴溝68と、該溝後
端に突設される中骨支持用ストツパ69とより成
り、前記カツターW2,W3により切目7を施さ
れた身部92の中骨95をストツパ69により支
持せしめ、両割身93,94はコンベアベルト6
1,62により移行せしめ、同時にウオータージ
エツトW4により臓物96を排出洗浄し、分離し
た時点で中骨95は切欠溝68より落下し、下方
の中骨移送コンベアC2により適所に搬出され

おろし用カツターW2,W3の前方適所に配備
し、魚の通過と同期せしめて斜め方向に往復運動

部を上方に位置させながらコンベアにより移行さ
