(Problems to be Solved by the Invention) When using the above conventional pot, etc., only the bottom of the pot is heated and not all of the combustion gas is involved in heating the cooking liquid in the pot, so the thermal efficiency is extremely low. bad. In addition, it is said that in the above-mentioned fryer, the thermal efficiency cannot be increased that much because the firebox is located outside the hot liquid tank and the combustion gas passing through the heat transfer tube is subjected to fluid frictional resistance. There was a problem.

(Function) According to the cooking device of the present invention, when the food to be cooked is thrown into the hot liquid tank containing the hot liquid for cooking from the open upper side, the hot liquid absorbs heat by the food to be cooked. As the temperature decreases and the specific gravity increases, the combustion gas flows out into the circulation pipe connected to the bottom of the hot liquid tank, and the combustion gas generated in the firebox located at the bottom of the circulation pipe whose one end is connected to the top of the hot liquid tank. The heat is received in the heat exchanger, the temperature rises, the specific gravity becomes small, the liquid rises in the circulation pipe, flows into the hot liquid tank from the upper part of the hot liquid tank, and is circulated.

On the other hand, the combustion gas generated in the firebox passes through the heat exchange section and is then guided through the gas conduit to the circulation pipe connected to the upper part of the hot liquid tank, where it imparts heat to the hot liquid in the circulation pipe. At the same time, the heat is introduced to the outer periphery of the hot liquid tank to keep the hot liquid tank warm, and the heat is effectively utilized.

In the cooking device, a hot liquid 2 such as heated oil for cooking is stored in a hot liquid tank 1 which is open at the top. Liquid 2 is circulating. In addition, the cooking device generates combustion gas in a firebox 5 disposed at the lower part of the circulation pipe 3, and when the combustion gas passes through the heat exchange section 6, it gives heat to the hot liquid, and further supplies it to the circulation pump 7. Therefore, the circulating speed of the hot liquid is increased, impurities in the hot liquid are separated and removed in the impurity separation section 8, and suspended impurities such as fried slag on the surface of the hot liquid are removed in the impurity receiver 9, thereby maintaining the quality of the hot liquid. As a result, the exhausted hot liquid is replenished from the replenishment liquid tank 10. Then, the cooking device guides the combustion gas after passing through the heat exchange section 6 to the outer periphery of the riser pipe 3b through the gas conduit 11, and further blows it out to the upper surface of the hot liquid, and the hot liquid tank 1.
The hot liquid 2 is kept warm by being guided to the outer periphery of the hot liquid 2. The components other than the replenishment liquid tank 10 are housed in a common casing 12, and the whole can be easily moved together with the replenishment liquid tank 10 attached to the side of the casing 12 using casters 13 provided at the lower end of the casing 12. ing.

When the burner 16 is ignited, the combustion gas generated in the firebox 5 consists of nitrogen, nitrogen dioxide, and some air, and due to its buoyancy, it heats the hot liquid while passing through the heat exchanger 6 and folds it. It reaches the lower end of the vertical conduit 11b through the curved conduit 11a, and after giving heat to the hot liquid in the rising pipe 3b while rising in the vertical conduit 11b, it flows from the outlet 11d along the upper surface of the hot liquid to the impurity receiver 9. It blows impurities such as fried slag floating on the liquid surface into the impurity receiver 9, and also covers the top surface of the hot liquid to prevent heat radiation from the surface of the hot liquid and deterioration due to oxidation of the hot liquid.

When the food to be cooked is added from above, the hot liquid 2 in the hot liquid tank 1 decreases in temperature and increases in specific gravity, descends in the downcomer pipe 3a, and passes through the filter 8b in the impurity separation section 8. Impurities are separated and removed, and the connecting pipe 3c
In the heat exchange section 6 through the circulation pump 7, the temperature increases by receiving heat from the combustion gas, and the specific gravity becomes small.
It further rises in the riser pipe 3b while receiving heat from the combustion gas, and flows into the hot liquid tank 1 from the upper end of the riser pipe 3b. That is, the hot liquid 2 is circulated at high speed through the circulation pipe 3 by forced circulation by the pump 7 in addition to convection due to the temperature rise in the heat exchange section 6 and riser pipe 3, and is maintained at a predetermined temperature or higher.

According to the above embodiment of the present invention, the hot liquid 2 is forcibly circulated at high speed using the pump 7 in addition to convection, so there is an advantage that impurities can be sufficiently separated and removed by the filter 8b. The heat exchange section 6 has good heat exchange performance because the plurality of hot liquid pipes 6a are arranged in parallel along the direction perpendicular to the flow of combustion gas. Note that the mounting position of the heat exchanger 6 can be changed appropriately.

(Effects of the Invention) The present invention is configured as described above, and includes a hot liquid tank containing a hot liquid, a circulation pipe whose both ends communicate with the lower and upper parts of the hot liquid tank and which circulate the hot liquid, and a circulation pipe that circulates the hot liquid. Combustion gas generated in the firebox located at the bottom of the circulation pipe passes through a circulation pump interposed in the circulation path of the hot liquid through the pipe, and the heat of the combustion gas is transferred to the hot liquid in the circulation pipe. By providing a heat exchange section that provides heat exchange, the hot liquid in the hot liquid tank is always stably and smoothly circulated and maintained at a predetermined temperature or higher, and the combustion gas that has passed through the heat exchange section is transferred to the hot liquid tank. By guiding the hot liquid into the circulation pipe on the side that communicates with the outer periphery and the upper part of the hot liquid tank, the hot liquid in the hot liquid tank is reliably kept warm, the heat of the combustion gas is used effectively, and the overall thermal efficiency is improved. It has effects such as being able to provide a high quality cooking device.
