らかさが要求される菓子類についても使用でき

によつて発生した高温気体を焼成室内上部に滞留
させて雰囲気熱とし、この高温気体を自然対流で
熱板上まで降下させて熱板上の被焼成物を焼成す
るガスオーブンにおいて、
焼成室内上部には所要数の蓄熱部材が着脱可能

本発明を、図面に示した実施例に基づき更に詳
細に説明する。第1図および第2図において、ガ
スオーブン1の周壁部は石綿等の断熱材15が充
填してある。前面にはバーナの温度調整用ツマミ
41を備えている。ガスオーブン1内は後で説明
する熱板6で上室1aと下室1bとに分けてあ
る。ガスオーブン1の前面には扉2が、後部には
後部排気道13と通じる排出口3を有している。
上室1a内の天井よりやや下方には上火バーナ5
が配設してある。上火バーナ5は先端を閉鎖した
中空の管を使用し、その上面には長手方向に添つ
て斜め上方向に向けて二列並行にガスノズル55
が列設してある。上火バーナ5の上には火移り板
56が添設してあり、下部には上火バーナ5の熱
を焼成室である上室1a内に拡散する熱拡散板7
が配設してある。熱拡散板7の中央部分には上火
バーナ5の熱を熱板6上の被焼成物に均一に当て
るため所要数の小孔71が穿設してある。この熱
拡散板7とほぼ同じ高さであつて熱拡散板7を挟
んで前後には、蓄熱部材である所要数の蓄熱棒7
