Description
本発明はリンゴパルプ含有組成物に関する。
リンゴパルプは食品分野において食品の増粘
剤、保水剤として広く利用されて来たが、最近は
リンゴパルプにおける血中コレステロールの低
下、腸内異常の改善、腸内滞便時間の短縮等の諸
作用が注目を集めるようになり、その結果、いわ
ゆるダイエタリーフアイバーの供給源として利用
される機会がいつそう多くなろうとしている。
しかしながら、リンゴパルプを食物繊維の供給
源として服用した場合、腸内でのガス発生がいち
ぢるしく促進され、いわゆる腹部膨満感を訴える
人が少なくない。この腹部膨満感は服用者に多大
の不快を与え、リンゴパルプの積極的な服用を阻
害する結果を招いているのが実情である。
かかる実情にかんがみ、本発明者は不快なる腹
部膨満感を与えることの少ないリンゴパルプ含有
組成物について種々の検討をおこなつた。その結
果、組成物中にラクツロースが含有されることに
より所定の目的が達成されることを見出し、本発
明を完成した。
リンゴパルプは一般にはリンゴよりジユースを
搾汁した残滓を原料にして、これより皮、種、芯
等を除き、さらに糖や有機酸を可及的に除去して
得られるものであり、そのパルプ質は、リンゴ果
肉の細胞の細胞壁を構成するセルロース、ヘミセ
ルロースのごとき水不溶区分とペクチンのごとき
水可溶性区分とを含んでいる。
本発明に係るラクツロースは入手し得るものを
使用すればよく、例えば異性化乳糖として与えら
れるものを使用すればよい。異性化乳糖とは乳糖
を適当な方法により異性化し、約30〜60%のラク
ツロースを含むようにした混合糖であり、液状あ
るいは粉末状のものが入手され得る。
配合量は異性化乳糖として配合した場合、後記
効果例より明らかなごとくリンゴパルプ100重量
部に対して異性化乳糖が10〜100重量部の範囲で
あればよく、従つて、ラクツロースとして3〜60
重量部がよい。リンゴパルプ含有組成物は、粉末
状、液状、半固形状等の諸形状が可能であり、具
体的には、例えば焼菓子、ケーキ、ジユースを挙
げることができる。
次に本発明の効果を以下の効果例をもつて示
す。
効果例 1
リンゴパルプ90g(固形分として10g)を空腹
時に一日一回5日間服用させ、腹部膨満感を訴え
た人10名を選び、処方が下記に示すとおりである
5種の試料を上記の方法と同様に服用せしめ、腹
部膨満感の発生状況を検討した。

In view of these circumstances, the present inventors have conducted various studies on apple pulp-containing compositions that do not give an unpleasant feeling of fullness to the abdomen. As a result, the inventors discovered that the desired objective could be achieved by containing lactulose in the composition, and completed the present invention. Apple pulp is generally obtained from the residue obtained by squeezing the juice from apples, removing the skin, seeds, core, etc., and removing as much sugar and organic acids as possible. The pulp contains water-insoluble fractions such as cellulose and hemicellulose, which constitute the cell walls of apple pulp cells, and water-soluble fractions such as pectin. As the lactulose according to the present invention, any available lactulose may be used, for example, lactulose provided as isomerized lactose may be used. Isomerized lactose is a mixed sugar made by isomerizing lactose by an appropriate method to contain about 30 to 60% lactulose, and is available in liquid or powder form. When compounded as isomerized lactose, the amount of isomerized lactose should be in the range of 10 to 100 parts by weight per 100 parts by weight of apple pulp, as is clear from the effect example below.
Parts by weight are good. The apple pulp-containing composition can be in various forms such as powder, liquid, and semi-solid, and specific examples include baked confectionery, cake, and juice. Next, the effects of the present invention will be illustrated with the following example effects. Effect example 1 10 people who complained of abdominal bloating were given 90g of apple pulp (10g as solid content) on an empty stomach once a day for 5 days, and 5 samples with the prescriptions shown below were given to them. The subjects were administered the same method as in the previous study, and the occurrence of abdominal bloating was examined.
