水を強制溢流させるものが開発されている(特公
昭40−9914号)。ところがこのロータリー翼は排
気ダクトの排気を間歇的に停止しかつ通風抵抗と
なるため調理用排煙の強力で連続的排煙を行うこ
とは困難である。

軽いものが浮上してスカムとなり、比重の大な灰
粒子等は水中に沈降してスライムとなる。そして
上記スカムは溢流堰の自然溢流水に伴つて水密排
水装置によつて下水道等に排出される。上記下引
ダクト及び散水ダクトの内部の気圧は上記排水装
置が水密であるため上昇することなく減圧が保持
される。又上記受水槽中の水や散水のため上記両
ダクト及び内部気体は冷却される。

ト2の下端にはステンレススチール製水平散水ダ
クト3を接続し、これを地面又は地下に配設し、
その先端に立上り部を設け、その上端に調理室1
の外に向う排風機4を接続するものである。上記
散水ダクト3の下部には散水管13を水平に配設
し、同管13に散水ノズル14を上向に突設し、
ポンプ又は水道栓に接続して同ノズル14から散
水ダクト3内に散水15する。又同ダクト3の一
端部に自然溢流堰6を設けて同堰6と散水ダクト
3の起端面との間に散水受水槽5を形成するもの
である。この溢流堰6の外側には水密排水装置7
を設ける。この排水装置7は第1図に示すように
上向U字管16の一端開口部を溢流堰6の外側に
開口し、他端に上向U字管17を接続して上下方
向蛇行管を形成し上向U字管16の底部を下向U
字管17の排出下端にバイパス管18で接続し、
同バイパス管18に開閉弁19を設けてなるもの
である。そのため溢流堰6の溢流水20は上向U
字管16内に貯水し下向U字管17の上端水準に
水位が保たれ、溢流水20は下向U字管17の上
端を溢流して排出され水密が保たれる。溢流水2
0に伴つて堰6を越えたスカム21は上向U字管
16の一端開口部の水面上に浮上堆積される。そ
の場合は排風機4を停止しバイパス管18の開閉
弁19を開くことによつて水位が第1図仮想線水
準に下降しスカム21は下降水面上に浮く、その
後同開閉弁19を閉じると溢流水20によつて上
向U字管16の水位が上昇し上昇に際し下降した
スカム21の半分量は同U字管16の他端に浮上
して下向U字管17から排出する動作を複数回繰
返すことにより上記溢流スカム21を排出するこ
とができる。この排出作業は業務調理中止時間又
は休日等に行えばよいし、排風機4から排出され
る風の中のスカム量を見てその時期を決めること
ができる。又第2図で示すようにロータリーバル
ブ22によつて溢流水20とスカム21とを同時
に排出しても差支えない。尚図中23で示すもの
は調理物、24は調理用排煙、25は沈降スライ
ム及び貯水排出管、26はその開閉弁、27はの
ぞき蓋である。
