工したもので構成されているので、内筒はその内
面がパンチング材の孔の周囲で若干の凹凸面を呈
している。上記装置を用いてなす本発明者の実験
によると、加えられる加熱水蒸気の温度、圧力、
大豆の搬送速度の如何によつて程度の多少はある
ものの、移送される大豆粒のうち前工程(脱皮工
程)で破砕されたものの一部が内筒の内壁に滞留
して壁面に付着してしまう。これは、上記の凹凸
面に起因して生じるものなのか、水蒸気の分散が
不均一であるからなのか、はたまた一旦内筒に入
った水蒸気が孔から出てしまうことに困るのかは
