[Prior Art] In general, sake is liable to be aged during storage and easily deteriorates in quality such as coloring and perfume. As a method to prevent such quality deterioration, (1) storage temperature is lowered as compared with the conventional method. (2) Remove dissolved oxygen. A method has been adopted, and addition of activated carbon, N 2 gas substitution, etc. have been attempted as a method of removing dissolved oxygen in (2). But these methods are not perfect. A method using an oxygen scavenger has been considered as an alternative method, but the method using a conventional oxygen scavenger is not perfect.

Generally, iron-based deoxidants are often used,
Alcohol in the oxygen absorber due to contact between the oxygen absorber and sake,
In some cases, water is transferred and the oxygen scavenger gets wet, the oxygen scavenging rate decreases, and the oxygen scavenging reaction stops halfway.
Further, iron was dissolved in sake and coloring of sake was unavoidable, which was difficult to carry out on an industrial scale.

The present invention uses iron powder, ascorbic acid, erythorbic acid or catechol and the like as a main component of a deoxidizer in a closed container together with sake, without causing a situation in which the oxygen scavenger elutes even when contacted with sake Deoxidizing reaction is performed continuously, small containers such as bottles and cans can be easily filled, and it looks good in appearance. It relates to the preservation method of raw sake, raw sake, and general sake before and after shipment.

In order to solve the above problems, the present inventors pack an oxygen absorber in a blister of a packaging material as shown in the drawing, and further isolate this blister with a breathable material and place it in a space in a sealed container. The present invention was invented and the present invention was completed. That is, according to the present invention, the air-permeable material surface of a laminated material composed of a substantially gas-impermeable material and a gas-permeable material is aligned with the opening of a cup-shaped plastic container containing an oxygen scavenger, and a gas-permeable adhesive material is interposed. Sake is sealed and stored in a container formed by stacking and bonding and closing the opening so as to package a so-called blister-packaged oxygen absorber isolated from the inner lid of the cap with a breathable material. It is a method of storing sake that is characterized by that.

The blister package can be formed by aligning the air-permeable material surface of the above-mentioned laminated material with the opening of the cup-shaped molding container and adhesively sealing it with a gas-permeable adhesive material. The air-permeable adhesive material is preferably a heat-fusible resin having a low softening point, and a coating layer of the heat-fusible resin is provided on the air-permeable material surface of the air-permeable material of the laminate material, or the heat-fusible resin Heat-sealing becomes possible by laminating and adhering the films and opening the holes.

FIG. 1 shows a blister-packed oxygen scavenger in which upper (1) and lower (3) packaging materials with low air permeability and moisture permeability are used, and between them (2) breathable packaging material. By filling the oxygen absorber packed in a blister into a cap having a hole at the bottom, these problems can be solved. That is, by inserting an air-permeable packaging material between packaging materials having low air permeability and low moisture permeability, deoxidizing oxygen from the side surface of the packaging material can prevent elution of the oxygen absorber in alcoholic beverages.

FIG. 2 shows that the blister is further filled inside the cap, and then the cap is combined with a microporous film or a plastic film having a sealing property such as polyethylene, polyester, nylon, aluminum, polypropylene, etc., to form a hole in the lower part of the cap. The film is sealed so that the alcohol and the oxygen scavenger do not come into complete contact with each other.

After 150 days, the sensory evaluation by Kikishu was excellent in total quality, the absorbance showing coloring was 0.033 at 430 mμ, and the degree of aging was 3.DG.
(3. Deoxyglycosone) 0.083 mM, dissolved oxygen 0.03 ppm
The aging did not proceed, and the quality was maintained well. On the other hand, raw sake that does not use oxygen scavenger is not possible due to the comprehensive quality of kikishu.
Absorbance was 0.07, dissolved oxygen was 5.6 ppm, and 3.DG was 0.427 mμ, and the quality was deteriorated due to the appearance of old aroma due to the progress of coloring and aging.
