る方法(公開特許公報平1−275512)が知られている
が、これらの方法によって得られる水溶性卵殻膜は赤黒
褐色に着色し、我慢のならない硫化水素様の異臭をとも
なっており実用的ではなく、更にその製造工程中に硫化
水素が発生するなどの問題があるため、上記の卵殻膜有
効利用の妨げとなっている。

た。表中の色調の数値は、日本電気工業(株)製色差計
にて測定したb値であり、b値の値が大きくなるほど黄
色味が強いことを示す。また、臭いと風味はパネラー20
名の官能試験結果で示した。
