【発明の詳細な説明】 (イ)産業上の利用分野 本発明は家庭でパンを製造する製パン器でパン材料と水
とで混ねつを始める段階での混ねつに関するものであ
る。

(ロ)従来の技術 一般にパンの製造はパン材料である小麦粉ミルク、ショ
ートニング、塩、イースト菌等のパン材料に水を注加し
て混ねつを開始し次いで、発酵、又再こね、ベンチタイ
ム、丸め、ホイロ、焼き上げの工程を経てパンを手動で
或いは上記工程のシーケンスを自動化して作られてい
る。所が上記パン材料に水を注入して混ねつを開始した
時、粉体に水が浸透しない内はこね用回転羽根の回転速
度が速すぎると該羽根によって粉体のみがパンケース外
に跳ね飛ばされるので最初水と粉体が融合しないうちは
羽根の回転速度を遅くして粉体を飛ばさない様にし、や
がて混ねつし、パン材料に十分水が浸透した後は、回転
を早くして混ねつに必要な回転数に戻している。即ち混
ねつの速度を変える事によって粉体が飛散するのを防止
する様にしている。

るので回転羽根の駆動用モーターの回転数を直流モータ
ーでは入力電圧を加減して減速するか、交流誘導モータ
ーでは減速器を使用して減速する等の方法がとられてい
る。

したものである。

かる状態から羽根を瞬時回転し粉体がケース外に飛び出
る前に停止する様にすると粉体はやゃ静止の状態に戻る
斯くして粉体が落ち着くまで休止させてから 再び羽根を舜時回転、休止をする動作を数十回繰り返し
すると粉体はパンケース外に飛び散ること無く、水と良
く融合して糊状化する。斯かる状態になってから羽根の
回転を連続運転に切り替えて、こね工程に移る。従っ
て、モーターの速度変速によらない間欠パルス通電によ
って変速の困難な誘導式モーターで変速器を使用しない
で粉体をパンケース外に飛散させずに混ねつさせる事が
出来る。

号を出す制御部10は第3図のタイムチャートに示す制御
部10にプログラムされた通りに回転及び停止をする。時
刻イから混ねつ用羽根4が回転を始めると水12、粉体11
は羽根4と同じ方向に廻り出すが、やがて水12,粉体11
及び羽根4の動きによって水分を含まない一部の粉体ケ
ース3の上縁に向かって飛び上がって来る。制御部10に
はこの時間以前にモーター9が停止する様にプログラム
されているので、モーター9が時刻ロで停止すると水1

くコスト低減を計れる他減速器等から発生する騒音も無
い幾多の利点がある。
