Abstract
본 발명은 깐마늘 저장용 조성물 및 이를 이용하여 제조된 갈변이 방지된 깐마늘에 관한 것이다.
본 발명의 깐마늘 저장용 조성물의 제조방법은, 락토바실러스 플라타넘(Lactobacillus plantarum) 배양액과 당류로 구성된 혼합액을 제조하는 제1단계, 꾸지뽕나무의 열매를 발효한 후, 이를 추출하여 꾸지뽕나무 열매 발효추출액을 제조하는 제2단계 및, 상기 혼합액 및 상기 꾸지뽕나무 열매 발효추출액을 혼합하여 갈변 방지능을 갖는 깐마늘 저장용 조성물을 제조하는 제3단계를 포함하는 것이 특징이다.

이에 반면, 비교예 1의 깐마늘 2는 15일째 부터 갈변이 발생되어 20일째는 색이 많이 변질됨을 확인하였으며, 비교예 2의 깐마늘 3은 비교예 1보다는 보관기간이 다소 길었으나 여전히 20일까지의 보관은 어려웠으며, 에탄올 특유의 향으로 인해 맛과 향에 다소 거부감을 나타냄을 확인하였다.
