Abstract
La presente invención se refiere a un proceso para fabricar un color caramelo que comprende a) mezclar un carbohidrato con un compuesto de amoniaco y un compuesto de sulfito y a un pH de mayor que aproximadamente 4.0 a aproximadamente 6.0; y b) calentar la mezcla de la etapa a) en un recipiente sellado a una temperatura de aproximadamente 120°C a aproximadamente 137°C y manteniendo una temperatura en el intervalo por al menos aproximadamente 2 horas, el tiempo y temperatura son suficientes para producir un producto que tiene un nivel de color de al menos aproximadamente doble resistencia y un nivel de 4-MeI de menos de aproximadamente 20 ppm. También se proporciona un proceso de calentamiento incrementado que da como resultado un producto con color caramelo similar.
