The soup is a super authentic tonkotsu broth that is carefully simmered in-house. This tonkotsu soup combined with a dashi broth creates a rich umami flavor that you won't find anywhere else. The tripe used is the plump small intestines of Omi beef, delivered from a local butcher. The combination of Omi beef tripe and the house-made tonkotsu soup is simply the best.
