Abstract
本発明の目的は、カリウムと共にナトリウムも低減され、且つ、顕著な収斂味の原因となり得る高濃度のカルシウムを伴わない調整コーヒーを提供することである。コーヒー抽出液又はその上清を、H形酸性陽イオン交換樹脂で処理した後に塩基性陰イオン交換樹脂で処理することで、カリウムと共にナトリウムも低減され、且つ、顕著な収斂味の原因となり得る高濃度のカルシウムも伴わない調整コーヒーが得られる。
Description
本発明は、カリウム含量が低減されるよう成分調整された調整コーヒーの製造方法に関する。
慢性腎臓病(CKD)患者は腎機能の低下に伴いカリウムの排泄が不十分となることで、不整脈や心停止のリスクが高まる。このため、CKD患者は食事療法の一環として、カリウム摂取量を制限される場合がある。
一方で、コーヒーは嗜好性の高さから日常的に飲用される場合が多い。しかしながら、コーヒーには多量のカリウムが含まれるためCKD患者が気軽に飲用することができない。このため、コーヒーに含まれるカリウム量を低減する製造技術が提案されている。
例えば、特許文献1においては、CKD患者向けにゼオライトを用いることで低カリウムコーヒーを製造する方法が提案されている。この方法では、ゼオライト構造中のナトリウムをカリウムと置換するため、コーヒー中のカリウム量を低減させる一方でナトリウム量は増加する。
特許文献2においては、飲料中からカリウムを低減する方法としてH型陽イオン交換樹脂を用いる方法が提案されている。この方法では、H型陽イオン交換樹脂により脱塩された飲料のpHが酸性に傾くことから、カルシウム塩を添加してpHを調整する。
ゼオライトを用いた製造方法で得られる低カリウムコーヒーは、低減させたカリウムの分ナトリウムが増加しているため、カリウムだけでなくナトリウムも制限されるCKD患者用のコーヒーとしては適切とはいえない。
また、H型陽イオン交換樹脂による脱塩及びカルシウム塩によるpH調整を用いた製造方法で得られる低カリウム飲料は、カリウムと共にナトリウムも低減されている点で、CKD患者用の飲料としては適しているといえる。しかしながら、本発明者がこの製造技術をコーヒーに適用する試みを行ったところ、pH調整に付随する高濃度のカルシウムがコーヒーにおいて不快な収斂味を顕著に増大させ得るという課題に直面した。
そこで本発明の目的は、カリウムと共にナトリウムも低減され、且つ、顕著な収斂味の原因となり得る高濃度のカルシウムを伴わない調整コーヒーを提供することにある。
本発明者は鋭意検討の結果、コーヒー抽出液を、H形酸性陽イオン交換樹脂で処理した後に塩基性陰イオン交換樹脂で処理することで、カリウムと共にナトリウムも低減され、且つ、顕著な収斂味の原因となり得る高濃度のカルシウムも伴わない調整コーヒーが得られることを見出した。本発明は、これらの知見に基づいてさらに検討を重ねることにより完成したものである。即ち、本発明は、下記に掲げる態様の発明を提供する。
項1. コーヒー抽出液L1又はコーヒー抽出液の上清L2を、H形酸性陽イオン交換樹脂と接触させ、分離液L3を得る工程Aと、
前記分離液L3を、塩基性陰イオン交換樹脂と接触させ、分離液L4を得る工程Bと、を含む、調整コーヒーの製造方法。
項2. 前記分離液L4と、コーヒー抽出液の澱Pとを混合し、混合分離液L5を得る工程Cをさらに含む、項1に記載の製造方法。
項3. コーヒー抽出液を固液分離する工程Dをさらに含み、前記澱Pが前記工程Dによって得られるものである、項2に記載の製造方法。
項4. コーヒー抽出液を固液分離する工程Dをさらに含み、前記上清L2が前記工程Dによって得られるものである、項1~3のいずれかに記載の製造方法。
項5. 前記コーヒー抽出液L1又は前記上清L2のBrix値が20~55%であり、
前記分離液L3中のカリウムイオンの濃度が50~6300ppmである、項1~4のいずれかに記載の製造方法。

カリウムイオンの濃度が0~300ppm、
ナトリウムイオンの濃度が0~15ppm、
カルシウムイオンの濃度が0~20ppm、並びに
クロロゲン酸の濃度が1~20ppm及び/又はキナ酸の濃度が50~350ppmである、調整コーヒー。
項12. 前記成分組成において、前記カルシウムの濃度が10~20ppmである、項11に記載の調整コーヒー。
前記分離液L3を、塩基性陰イオン交換樹脂と接触させ、分離液L4を得る工程Bと、を含む、調整コーヒーの製造方法。

本発明によれば、カリウムと共にナトリウムも低減され、且つ、顕著な収斂味の原因となり得る高濃度のカルシウムを伴わない調整コーヒーが提供される。
1.調整コーヒーの製造方法
本発明の調整コーヒー(即ち、カリウム含量が低減されるよう成分調整されたコーヒー)の製造方法は、コーヒー抽出液L1又はコーヒー抽出液の上清L2を、H形酸性陽イオン交換樹脂と接触させ、分離液L3を得る工程Aと、前記分離液L3を、塩基性陰イオン交換樹脂と接触させ、分離液L4を得る工程Bと、を含むことを特徴とする。
本発明の調整コーヒー(即ち、カリウム含量が低減されるよう成分調整されたコーヒー)の製造方法は、コーヒー抽出液L1又はコーヒー抽出液の上清L2を、H形酸性陽イオン交換樹脂と接触させ、分離液L3を得る工程Aと、前記分離液L3を、塩基性陰イオン交換樹脂と接触させ、分離液L4を得る工程Bと、を含むことを特徴とする。
本発明の調整コーヒーの製造方法の好ましい実施形態は、前記分離液L4と、コーヒー抽出液の澱Pとを混合し、混合分離液L5を得る工程Cをさらに含むことができる。本発明の調整コーヒーの製造方法の好ましい実施形態は、コーヒー抽出液を固液分離する工程Dをさらに含むことができる。本発明の調整コーヒーの製造方法の好ましい実施形態は、前記分離液L4又は前記混合分離液L5を、希釈、濃縮、殺菌、及び乾燥の少なくともいずれかの処理に供する工程Eをさらに含むことができる。
以下、本発明の調整コーヒーの製造方法について詳述する。
工程A
工程Aにおいては、コーヒー抽出液L1又はコーヒー抽出液の上清L2を、H形酸性陽イオン交換樹脂と接触させ、分離液L3を得る。
工程Aにおいては、コーヒー抽出液L1又はコーヒー抽出液の上清L2を、H形酸性陽イオン交換樹脂と接触させ、分離液L3を得る。
コーヒー抽出液L1としては、焙煎コーヒー豆粉砕物の水(水の温度は問わない)による抽出液又はその水希釈液、当該抽出液から一部の水が除去された濃縮液、当該濃縮液を水で再希釈した液、当該抽出液の水が除去された乾燥物を水に再溶解又は再分散した液等が挙げられる。
上清L2としては、コーヒー抽出液の固液分離により得られる上清が挙げられる。上清L2の原料となるコーヒー抽出液としては、上記コーヒー抽出液L1と同様のものが挙げられる。本発明においては、上清L2として、後述の工程Dにより得られた上清を使用できる。
コーヒー抽出液L1及び上清L2それぞれの固形分濃度(Brix値)については特に制限はない。例えば、当該Brix値としては、0.4~55%が挙げられる。また、コーヒー抽出液L1及び上清L2のBrix値としては、例えば、飲用時相当の値であってもよいし、飲用時相当の値よりも高くてもよい。より具体的には、飲用時相当のBrix値としては、例えば0.4~4%、好ましくは0.8~3%、より好ましくは1~2%、さらに好ましくは1.2~1.7%が挙げられ、飲用時相当の値よりも高いBrix値としては、例えば20~55%、好ましくは24~40%、より好ましくは26~35%、さらに好ましくは28~33%が挙げられる。
なお、本発明において「Brix値」とは、対象となる液中のコーヒー固形分の含有量(重量%)を意味する。ここで、「コーヒー固形分」とは、対象となる液を一般的な乾燥法(凍結乾燥、蒸発乾固など)を用いて乾燥させて水分を除いた後の、乾固物の重量を意味する。また、本発明におけるBrix値は、20℃のサンプルに対して測定される値であり、Brix計(屈折計RA-620:京都電子工業株式会社)による測定値(重量%)として得ることができる。
H形酸性陽イオン交換樹脂としては、カリウムイオンを吸着して水素イオンを放出できるイオン交換樹脂であれば特に限定されない。
H形酸性陽イオン交換樹脂としては、強酸基(スルホン酸基等)を交換基として有する強酸性陽イオン交換樹脂、及び弱酸基(カルボキシル基、ホスホン酸基、ホスフィン酸基等)を交換基として有する弱酸性陽イオン交換樹脂が挙げられる。H形酸性陽イオン交換樹脂の中でも、好ましくは強酸性陽イオン交換樹脂が挙げられる。
H形酸性陽イオン交換樹脂の母体構造についても特に限定されず、例えば、スチレン系重合体、アクリル系重合体、及びメタクリル系重合体が挙げられる。H形酸性陽イオン交換樹脂としては、1種の母体構造のものを単独で用いてもよいし、2種以上の母体構造のものを組み合わせて用いてもよい。これらの母体構造の中でも好ましくはスチレン系重合体が挙げられる。
H形酸性陽イオン交換樹脂の物理構造についても特に限定されず、ポーラスタイプ及びノンポーラスタイプ(ゲルタイプ)のいずれであってもよい。H形酸性陽イオン交換樹脂としては、これらのいずれかを単独で用いてもよいし、両方を組合わせて用いてもよい。これらの物理構造の中でも、好ましくはノンポーラスタイプが挙げられる。
H形酸性陽イオン交換樹脂の使用量については、H形酸性陽イオン交換樹脂自体の脱塩効率と、求められるカリウム低減のレベルとに応じて、当業者が適宜決定できる。具体的には、コーヒー抽出液L1又は上清L2のBrix値、及び使用するH形酸性陽イオン交換樹脂に応じて、当該H形酸性陽イオン交換樹脂の使用量と分離液中のカリウム量との関係を示す近似直線を予め取得しておき、当該近似直線から当該H形酸性陽イオン交換樹脂の使用量を決定できる。
工程Aで得られる分離液L3におけるカリウムイオン濃度は、H形酸性陽イオン交換樹脂での処理前のコーヒー抽出液L1又は上清L2におけるカリウムイオン濃度よりも低減されている。分離液L3における具体的なカリウムイオン濃度は、求められるカリウムイオン濃度の低減レベルに応じて定まるが、例えば、コーヒー抽出液L1又は上清L2におけるカリウムイオン濃度を100とした場合の相対値で、70以下、60以下、55以下、50以下、45以下、40以下、35以下、30以下、25以下、23以下、20以下、又は18以下が挙げられ、当該範囲(70以下、60以下、55以下、50以下、45以下、40以下、35以下、30以下、25以下、23以下、20以下、又は18以下)それぞれの下限値は、0以上、2以上、4以上、6以上、8以上、10以上、15以上、又は20以上から選択できる。
より具体的には、分離液L3中のカリウムの具体的な濃度としては、H形酸性陽イオン交換樹脂での処理前のコーヒー抽出液L1又は上清L2のBrix値が20~55%である場合にあっては、50~6300ppm、好ましくは100~5000ppm、より好ましくは500~4000ppm、さらに好ましくは1000~3000ppm、一層好ましくは1200~2500ppm、より一層好ましくは1600~2200ppm、1600~1900ppm、1900~2200ppm、又は2000~2200ppmが挙げられ、また、分離液L3中のカリウムの具体的な濃度としては、コーヒー抽出液L1又は上清L2のBrix値が0.4~4%である場合にあっては、0~270ppm、好ましくは0~200ppm、0~180ppm、より好ましくは0.7~160ppm、10~150ppm、50~140ppmm、さらに好ましくは70~130ppm、一層好ましくは80~120ppm、90~120ppmが挙げられる。カリウムの濃度は、原子吸光分光光度計(240FS AA:アジレント・テクノロジー株式会社)によって測定できる。なお、本発明において、ppmはmg/Lを意味する。
工程Aにおいて、H形酸性陽イオン交換樹脂で処理される上清L2の温度については、上清L2が液体である限り特に制限されず、例えば50℃以下、具体的には0℃超50℃以下が挙げられる。一般的に、処理対象液の温度が高いほどイオン交換効率が良くなるが、本発明の製造方法においては、イオン交換効率をより向上させる(即ち、得られる分離液L3中のカリウム量をより低減させる)ために、上清L2の温度が低い方が好ましい。このような観点から、上清L2の温度の好ましい例としては、0℃超40℃以下、より好ましくは0℃超25℃以下、0℃超20℃以下、又は5℃超25℃以下、さらに好ましくは0℃超15℃以下、又は5℃超20℃以下、一層好ましくは0℃超10℃以下、特に好ましくは0℃超5℃以下、1~5℃、3~5℃が挙げられる。
工程B
工程Bにおいては、分離液L3を塩基性陰イオン交換樹脂と接触させ、分離液L4を得る。
工程Bにおいては、分離液L3を塩基性陰イオン交換樹脂と接触させ、分離液L4を得る。
分離液L3は、カリウムイオンの低減とのトレードオフにより水素イオンが増大しているため、塩基性陰イオン交換樹脂によってpHを上昇させる。塩基性陰イオン交換樹脂としては、pHを上昇できるイオン交換樹脂であれば特に限定されない。
塩基性陰イオン交換樹脂としては、OH形の強塩基性陰イオン交換樹脂、及び遊離塩基形の弱塩基性陰イオン交換樹脂が挙げられる。OH形の強塩基性陰イオン交換樹脂としては、第四級アンモニウム基を交換基として有するイオン交換樹脂が挙げられ、遊離塩基形の弱塩基性陰イオン交換樹脂としては、第三級アミノ基を交換基として有するイオン交換樹脂が挙げられる。塩基性陰イオン交換樹脂の中でも、好ましくは、遊離塩基形の弱塩基性陰イオン交換樹脂、具体的には第三級アミノ基を交換基として有するイオン交換樹脂が挙げられる。
塩基性陰イオン交換樹脂の母体構造についても特に限定されず、例えば、スチレン系重合体、アクリル系重合体、及びメタクリル系重合体が挙げられる。塩基性陰イオン交換樹脂としては、1種の母体構造のものを単独で用いてもよいし、2種以上の母体構造のものを組み合わせて用いてもよい。これらの母体構造の中でも好ましくはアクリル系重合体、又はメタクリル系重合体が挙げられる。
塩基性陰イオン交換樹脂の物理構造についても特に限定されず、ポーラスタイプ及びノンポーラスタイプ(ゲルタイプ)のいずれであってもよい。塩基性陰イオン交換樹脂としては、これらのいずれかを単独で用いてもよいし、両方を組合わせて用いてもよい。これらの物理構造の中でも、好ましくはノンポーラスタイプが挙げられる。
塩基性陰イオン交換樹脂の使用量については、塩基性陰イオン交換樹脂のイオン交換効率と、分離液L4の求められるpHのレベルとに応じて、当業者が適宜決定できる。
分離液L4のpHとしては、例えば4~5.5、好ましくは4.5~5が挙げられる。なお、本発明において、pHは、25℃におけるpHを指す。
工程Bにおいて、塩基性陰イオン交換樹脂で処理される分離液L3の温度については、分離液L3が液体である限り特に制限されず、例えば95℃以下、具体的には0℃超95℃以下が挙げられる。本発明の製造方法においては、塩基性陰イオン交換樹脂処理によるpHの上昇効率をより向上させる(即ち、分離液L4のpHをより上昇させる)観点から、分離液L3の好ましい温度としては、5~95℃、より好ましくは10~95℃、さらに好ましくは20~95℃、一層好ましくは30~95℃、35~95℃、特に好ましくは38~95℃、40~95℃が挙げられる。また、塩基性陰イオン交換樹脂処理による可溶性固形成分の吸着を抑制する観点から、離液L3の好ましい温度としては、5~80℃、より好ましくは5~70℃、さらに好ましくは5~55℃、一層好ましくは5~50℃、又は10~40℃、特に好ましくは5~45℃、又は10~20℃が挙げられる。
工程C
本発明の製造方法が工程Cを含む場合、工程Cでは、工程Bで得られた分離液L4と、コーヒー抽出液の澱Pとを混合する。これにより、分離液L4と澱Pとを含む混合分離液L5を得る。
本発明の製造方法が工程Cを含む場合、工程Cでは、工程Bで得られた分離液L4と、コーヒー抽出液の澱Pとを混合する。これにより、分離液L4と澱Pとを含む混合分離液L5を得る。
澱Pとしては、コーヒー抽出液の固液分離により得られる澱が挙げられる。澱Pの原料となるコーヒー抽出液としては、上記コーヒー抽出液L1と同様のものが挙げられる。本発明においては、澱Pとして、後述の工程Dにより得られた澱を使用できる。
工程D
本発明の製造方法が工程Dを含む場合、工程Dでは、コーヒー抽出液を固液分離する。固液分離対象となるコーヒー抽出液としては、上記コーヒー抽出液L1と同様のものが挙げられる。
本発明の製造方法が工程Dを含む場合、工程Dでは、コーヒー抽出液を固液分離する。固液分離対象となるコーヒー抽出液としては、上記コーヒー抽出液L1と同様のものが挙げられる。
固液分離の方法としては、コーヒー抽出液を上清と澱とに分離できる方法が特に制限なく用いられる。固液分離の方法としては、例えば、遠心分離、静置、冷却等から、1種又は2種以上を選択できる。これらの分離方法の中でも、好ましくは遠心分離を用いる方法が挙げられ、より好ましくは連続遠心分離又はバッチ式遠心分離が挙げられる。また、バッチ式遠心分離を用いる場合、その条件については特に限定されないが、例えば1000~5000rpm、好ましくは2000~4000rpm、さらに好ましくは2500~3500rpmで、例えば5~40分、好ましくは10~30分、より好ましくは15~25分が挙げられる。また、これらの分離方法の中でも、静置、冷却等を用いる場合には、澱及び/又は上清の分離回収のために、デカンテーション、ろ過等の分離回収方法を組み合わせることができる。
工程Dで得られた上清は、上記工程Aの上清L2として用いることができる。また、工程Dで得られた澱は、上記工程Cの澱Pとして用いることができる。本発明の製造方法が工程C及び工程Dを含み、且つ、工程AでH形酸性陽イオン交換樹脂による処理対象としてコーヒー抽出液L1を用いる場合、工程Dで得られる上清及び澱のうち、いずれか一方のみを、上記工程Aの上清L2又は上記工程Cの澱Pとして用いてもよいし、両方を、それぞれ、上記工程Aの上清L2及び上記工程Cの澱Pとして用いてもよい。
工程E
本発明の製造方法が工程Eを含む場合、工程Eでは、分離液L4又は混合分離液L5を、希釈、濃縮、殺菌、及び乾燥の少なくともいずれかの処理に供する。これらの処理は、1種単独であってもよいし、2種以上の組み合わせであってもよい。工程Eでこれらの処理のうち2種以上が組み合わせられる場合、個々の処理の順番は任意である。
本発明の製造方法が工程Eを含む場合、工程Eでは、分離液L4又は混合分離液L5を、希釈、濃縮、殺菌、及び乾燥の少なくともいずれかの処理に供する。これらの処理は、1種単独であってもよいし、2種以上の組み合わせであってもよい。工程Eでこれらの処理のうち2種以上が組み合わせられる場合、個々の処理の順番は任意である。
希釈
工程Eが希釈の処理を含む場合、希釈に用いる溶媒としては、飲料に配合可能なものであれば特に限定されないが、例えば、水、エタノール、水及びエタノールの混合溶媒(より具体的には、エタノール5~15v/v%水溶液、好ましくはエタノール8~12v/v%水溶液等)等が挙げられる。溶媒の使用量については特に限定されず、調整コーヒーの形態に応じて適宜決定できる。例えば、調整コーヒーがストレート飲料である場合には、飲用時相当のBrix値となるように調整することができ、調整コーヒーが濃縮飲料である場合には、設計された濃縮度のBrix値となるように調整することができる。
工程Eが希釈の処理を含む場合、希釈に用いる溶媒としては、飲料に配合可能なものであれば特に限定されないが、例えば、水、エタノール、水及びエタノールの混合溶媒(より具体的には、エタノール5~15v/v%水溶液、好ましくはエタノール8~12v/v%水溶液等)等が挙げられる。溶媒の使用量については特に限定されず、調整コーヒーの形態に応じて適宜決定できる。例えば、調整コーヒーがストレート飲料である場合には、飲用時相当のBrix値となるように調整することができ、調整コーヒーが濃縮飲料である場合には、設計された濃縮度のBrix値となるように調整することができる。
濃縮・乾燥
工程Eが、濃縮及び/又は乾燥の処理を含む場合、濃縮及び乾燥の方法としては、溶媒を除去できる方法であれば特に限定されない。濃縮の方法としては、例えば、減圧濃縮、凍結濃縮、膜濃縮等が挙げられ、乾燥の方法としては、例えば、スプレードライ、フリーズドライ等が挙げられる。
工程Eが、濃縮及び/又は乾燥の処理を含む場合、濃縮及び乾燥の方法としては、溶媒を除去できる方法であれば特に限定されない。濃縮の方法としては、例えば、減圧濃縮、凍結濃縮、膜濃縮等が挙げられ、乾燥の方法としては、例えば、スプレードライ、フリーズドライ等が挙げられる。
殺菌
工程Eが殺菌の処理を含む場合、殺菌の方法としては、微生物を除去できる方法であれば特に限定されないが、例えば、熱殺菌及び光殺菌が挙げられる。熱殺菌としては、ボイル殺菌(例えば、湯煎による殺菌)、レトルト殺菌(例えば、100℃超の蒸気又は加圧熱水による殺菌)等が挙げられる。光殺菌としては、紫外線殺菌、電子線殺菌等が挙げられる。ボイル殺菌又はレトルト殺菌は、例えば調整コーヒーの性状が液体である場合に、調整コーヒーをパッケージした後に適用できる。光殺菌は、例えば調整コーヒーの性状が固体である場合に適用できる。
工程Eが殺菌の処理を含む場合、殺菌の方法としては、微生物を除去できる方法であれば特に限定されないが、例えば、熱殺菌及び光殺菌が挙げられる。熱殺菌としては、ボイル殺菌(例えば、湯煎による殺菌)、レトルト殺菌(例えば、100℃超の蒸気又は加圧熱水による殺菌)等が挙げられる。光殺菌としては、紫外線殺菌、電子線殺菌等が挙げられる。ボイル殺菌又はレトルト殺菌は、例えば調整コーヒーの性状が液体である場合に、調整コーヒーをパッケージした後に適用できる。光殺菌は、例えば調整コーヒーの性状が固体である場合に適用できる。
他の工程
本発明の調整コーヒーの製造方法は、本発明の効果を妨げない限り、任意のタイミングで、さらに他の工程を含むことができる。他の工程としては、栄養成分、機能性成分、及び/又は添加物を添加する工程等が挙げられる。機能性成分、及び添加物の具体例については、後述「2.調整コーヒー」で述べる通りである。
本発明の調整コーヒーの製造方法は、本発明の効果を妨げない限り、任意のタイミングで、さらに他の工程を含むことができる。他の工程としては、栄養成分、機能性成分、及び/又は添加物を添加する工程等が挙げられる。機能性成分、及び添加物の具体例については、後述「2.調整コーヒー」で述べる通りである。
2.調整コーヒー
本発明の調整コーヒー(即ち、カリウム含量が低減されるよう成分調整されたコーヒー)は、一般的なコーヒー(即ち、成分調整されていないコーヒー)に比べてカリウムイオン及びナトリウムイオンが低減され、且つ、顕著な収斂味の原因となり得る高濃度のカルシウムを伴わない。
本発明の調整コーヒー(即ち、カリウム含量が低減されるよう成分調整されたコーヒー)は、一般的なコーヒー(即ち、成分調整されていないコーヒー)に比べてカリウムイオン及びナトリウムイオンが低減され、且つ、顕著な収斂味の原因となり得る高濃度のカルシウムを伴わない。
本発明の調整コーヒーの具体的なカリウムイオン及びナトリウムイオンの濃度としては、Brix値が1.4%となるように調整された場合における濃度として、カリウムイオンで例えば0~300ppm、好ましくは0~220ppm、0~210ppm、より好ましくは0~190ppm、0~180ppm、さらに好ましくは0~140ppm、50~140ppm、90~140ppm、100~140ppmが挙げられ、ナトリウムイオンで例えば0~15ppm、好ましくは0~3ppm、より好ましくは0~2.6ppm、0~2.5ppm、さらに好ましくは0~2.0ppm、1~2.0ppm、1.5~2.0ppmが挙げられる。カリウム及びナトリウムの濃度は、原子吸光分光光度計(240FS AA:アジレント・テクノロジー株式会社)によって測定できる。
本発明の調整コーヒーのカルシウムイオンの濃度としては、Brix値が1.4%となるように調整された場合における濃度で、例えば0~20ppmが挙げられる。収斂味をより抑制する観点から、本発明の調整コーヒーのカルシウムイオンの濃度としては、好ましくは0~17ppm、0~15ppm、さらに好ましくは0~14ppm、0~10ppm、0~9ppm、1~9ppm、5~9ppmが挙げられる。また、味のキレ(即ち、後味の消失に要する時間の短さ)を向上させる観点、及びコーヒーが本来有する酸味の過度の低減を抑制する観点から、本発明の調整コーヒーのカルシウムイオンの濃度としては、好ましくは10~20ppm、より好ましくは12~20ppm、14~20ppmが挙げられる。なお、カルシウムイオンの濃度は、ICP発光分光分析計(5900 SVDV ICP-OES:アジレント・テクノロジー株式会社)によって測定できる。
本発明の調整コーヒーの好ましい実施形態においては、一般的なコーヒーに比べてクロロゲン酸及び/又はキナ酸が低減されている。クロロゲン酸及びキナ酸は、体内で馬尿酸に代謝される。馬尿酸は、腎線維化関連遺伝子の発現、細胞外マトリックスの不均衡、及び酸化ストレスを増加させることで慢性腎臓病のステージを進行させ得るため、慢性腎臓病患者を主たるターゲットとする低カリウムコーヒーにおいては、カリウムイオンだけでなく、クロロゲン酸及び/又はキナ酸が低含量であることが好ましい。具体的には、本発明の調整コーヒーでは、例えば、クロロゲン酸の濃度が1~20ppm及び/又はキナ酸の濃度が50~350ppmである。この組成は、本発明の調整コーヒーがBrix値1.4%の場合における濃度であってよい。クロロゲン酸の上記濃度の好ましい範囲としては、1~15ppm、より好ましくは1~13ppm、3~10ppm、4~10ppmが挙げられる。キナ酸の上記濃度の好ましい範囲としては、50~300ppm、より好ましくは50~280ppm、100~250ppm、100~220ppm、又は150~220ppmが挙げられる。
本発明の調整コーヒーは、カリウムイオン、ナトリウムイオン、カルシウムイオン、クロロゲン酸、及び/又はキナ酸が上記濃度となる成分組成を備えるために、上記「1.調整コーヒーの製造方法」に記載の製造方法により製造することが好ましい。
本発明の調整コーヒーは、好ましくは、調整前(より具体的には、コーヒー抽出液L1又は上清L2)に比べて味のキレが向上している。
本発明の調整コーヒーは、好ましくは、調整前(より具体的には、コーヒー抽出液L1又は上清L2)に比べて酸味が低減している。
本発明の調整コーヒーは、工程Cを含む調整コーヒーの製造方法によって得られるものである場合、好ましくは、工程Cを含まない調整コーヒーの製造方法によって得られる調整コーヒーよりもコク(即ち、飲用時に感じるボディ(重厚感))が向上しており、より好ましくは、調整前(より具体的には、コーヒー抽出液L1又は上清L2)とほぼ同等のコクを備える。
本発明の調整コーヒーは、上清L2を用いる調整コーヒーの製造方法によって得られるものである場合、好ましくは、調整前(より具体的には、上清L2)に比べて苦味が低減している。また、本発明の調整コーヒーは、工程Cを含む調整コーヒーの製造方法によって得られるものである場合、好ましくは、工程Cを含まない調整コーヒーの製造方法によって得られる調整コーヒーよりも苦味が低減している。
本発明の調整コーヒーは、コーヒー抽出液成分又はさらに他のコーヒー由来成分の他に、本発明の効果を妨げない限り他の成分を含んでいてもよいし、含んでいなくてもよい。また、本発明の調整コーヒーは、上記製造方法により製造されたものである場合、コーヒー抽出液L1又は上清L2の由来成分、工程(A)及び工程(B)で用いたイオン交換樹脂が放出したイオン、及び必要に応じて追加された澱P及び/又は溶媒の他に、本発明の効果を妨げない限り他の成分を含んでいてもよいし、含んでいなくてもよい。他の成分としては、栄養成分、機能性成分、及び添加物等が挙げられる。
栄養成分又は機能性成分としては、例えば、ビタミン又はビタミン様物質(ビタミンA、ビタミンB(ビタミンB1、ビタミンB2、ビタミンB6、ビタミンB12、葉酸、ナイアシン、パントテン酸、ビオチン等)、ビタミンC、ビタミンD、ビタミンE、ビタミンP、ビタミンK、CoQ10等);ポリフェノール(イソフラボン、エクオール、クロロゲン酸等);プロバイオティクス(乳酸菌、ビフィズス菌、酪酸菌等);プレバイオティクス(オリゴ糖、食物繊維等)等が挙げられる。これらの栄養成分又は機能性成分は、1種を単独で用いてもよいし、2種以上を組み合わせて用いてもよい。
添加剤としては、甘味料、香料、酸化防止剤、pH調整剤、増粘剤(賦形剤としても用いられる)、乳化剤等が挙げられる。
甘味料としては、糖類(ショ糖、オリゴ糖、ブドウ糖、果糖等)、糖アルコール(ソルビトール、マルチトール、エリスリトール、キシリトール、還元水あめ等)、高甘味度甘味料(アスパルテーム、アセスルファムカリウム、スクラロース、ネオテーム、アドバンテーム、サッカリン、ステビア等)が挙げられる。香料としては、フルフリルメルカプタン、ジアセチル、アセトイン、フルフラール、ブチリックアシッド、イソバレリックアシッド、メチルシクロペンテノロン、ガンマブチロラクトン、マルトール、バニリン、グアヤコール、フルフリルアルコール、リナロール、4-ビニルフェノール、フルフリルアセテート、ジメチルスルフィド、メチオナール、2-アセチルピラジン、2-イソブチル-3-メトキシピラジン、酢酸エチル、5-メチルフルフラール等が挙げられる。酸化防止剤としては、アスコルビン酸、トコフェロール、ジブチルヒドロキシトルエン、ブチルヒドロキシアニソール、エリソルビン酸ナトリウム、没食子酸プロピル、亜硫酸ナトリウム、二酸化硫黄、クロロゲン酸、カテキン等が挙げられる。pH調整剤としては、有機酸(クエン酸、コハク酸、酢酸、乳酸、リンゴ酸、酒石酸、グルコン酸等)、無機酸(リン酸等)、炭酸塩(炭酸カリウム等)、炭酸水素塩(炭酸水素ナトリウム等)等が挙げられる。増粘剤(賦形剤としても用いられる)としては、澱粉分解物(デキストリン等)、糖類(麦芽糖、トレハロース等)、食物繊維(難消化性デキストリン、ペクチン、グアーガム、カラギーナン等)、タンパク質(カゼイン等)等が挙げられる。乳化剤としては、グリセリン脂肪酸エステル系乳化剤(モノグリセライド、ジグリセライド、有機酸モノグリセライド、ポリグリセリンエステル等)、ソルビタン脂肪酸エステル系乳化剤(ソルビタンモノステアレート、ソルビタンモノオレエート等)、プロピレングリコール脂肪酸エステル系乳化(プロピレングリコールモノステアレート、プロピレングリコールモノパルミテート、プロピレングリコールオレエート等)、シュガーエステル系乳化剤(ショ糖ステアリン酸エステル、ショ糖パルミチン酸エステル、ショ糖オレイン酸エステル等)、レシチン系乳化剤(レシチン、レシチン酵素分解物等)等が挙げられる。これらの添加剤は、1種を単独で用いてもよいし、2種以上を組み合わせて用いてもよい。
本発明の調整コーヒーの性状については、液状及び固体状が挙げられる。液状の調整コーヒーとしては、コーヒー豆由来成分が通常のコーヒー飲用相当のBrix値に調整されている非濃縮飲料(希釈せずに飲用に供するもの)、及びコーヒー豆由来成分が通常のコーヒー飲用相当のBrix値よりも高く調整されている濃縮飲料(水で希釈して飲用に供するもの)が挙げられる。固体状の調整コーヒーとしては、粉末飲料及びフリーズドライ飲料(水に分散させて飲用に供するもの)が挙げられる。
本発明の調整コーヒーは、腎臓病(例えば慢性腎臓病等)、高カリウム血症、高齢者等の、カリウム摂取制限を要する人が飲用する嗜好飲料として用いることができる。
以下に実施例を示して本発明をより具体的に説明するが、本発明はこれらに限定されるものではない。なお、参考例1及び2、実施例1~3、並びに比較例1において、カリウムイオン及びナトリウムイオン濃度は、原子吸光分光光度計(240FS AA:アジレント・テクノロジー株式会社)で測定し、カルシウムイオン濃度を、ICP発光分光分析計5900 SVDV ICP-OES(アジレント・テクノロジー株式会社)で測定した。また、実施例4において、カリウムの濃度は、コンパクトカリウムイオンメータ(LAQUAtwin K-11:株式会社堀場製作所)で測定し、ナトリウムの濃度は、コンパクトナトリウムイオンメータ(LAQUAtwin Na-11:株式会社堀場製作所)で測定した。なお、H形酸性陽イオン交換樹脂及び塩基性陰イオン交換樹脂としては、後述の通りの市販品を用い、開封直後に重量を秤量して用いた。
[参考例1]
冷凍コーヒーエキス(Brix値:53%,pH:4.8,K+:19150ppm)(カフェドールFタイプ:ネスレ日本株式会社)600gを約4℃の冷蔵庫内で24時間静置して解凍し、純水(pH:5.8)400mLと混合し、スパーテルでよく撹拌することで、ベース液であるコーヒー抽出液L1(Brix値:30%,pH:4.8,K+:9931ppm)を得た。このコーヒー抽出液L1は、実施例1~3及び比較例1~2の調整コーヒーの調製に用いた。また、23mLのコーヒー抽出液L1を477mLの純水で希釈することで、参考例1の調整コーヒー(Brix値:1.4%,pH:4.8)を得た。

常温の70gのコーヒー抽出液L1を100mLトールビーカーに分取し、H形強酸性陽イオン交換樹脂(アンバーライトTMFPC240 H:オルガノ株式会社)を9.8g(12.7mL)添加した。磁気撹拌機[マグネチックスターラー(多連式)SM-60N:増田理化工業株式会社]を用いて10分間撹拌(回転速度:400rpm)し、目開き150μmの篩(実用新案型ふるい:株式会社飯田製作所)に通すことで樹脂を除去し、脱塩酸性コーヒーエキスである分離液L3(Brix値:26%、pH:2.6、K+:1738ppm、コーヒー抽出液L1のK+濃度を100とした場合の相対値が17.5)を得た。

50gの分離液L3を100mLトールビーカーに分取し、塩基性陰イオン交換樹脂(アンバーライトTMFPA53:オルガノ株式会社)を9.0g(13.9mL)添加した。磁気撹拌機を用いて1時間撹拌(回転速度:400rpm)し、目開き150μmの篩(実用新案型ふるい:株式会社飯田製作所)に通すことで樹脂を除去し、分離液L4(Brix値:23%,pH:4.8)を得た。

常温の100gのコーヒー抽出液L1を50gずつコニカルチューブ[Falcon(R)50mL 高透明度ポリプロピレン(PP)遠心分離用コニカルチューブ:コーニングインターナショナル株式会社]に分取し、卓上遠心機(himac CT6D:日立工機株式会社)を用いて20分間の遠心分離(回転速度:3000rpm)を行うことで、沈殿物である澱Pと上清L2を分離した。デカンテーションにより上清L2(Brix値:30%,pH:4.8,K+:9918ppm)を単離した。

500gのコーヒー抽出液L1をBrix1.4%に希釈し、容量2Lのステンレスビーカーに移し、次いで合成ゼオライトA-4,粒状(富士フイルム和光純薬株式会社)100g(0.50~1.18mm)を投入し、10分間、23℃にて攪拌機(スリーワンモータ攪拌機BL3000:新東科学株式会社)で400回転/分で攪拌させカリウムイオンを吸着させナトリウムイオンに交換した。その後、減圧濾過して、調整コーヒー液(Brix:1.4%、pH:7.1)を得た。
500gのコーヒー抽出液L1をBrix1.4%に希釈し、容量2Lのステンレスビーカーに移し、次いで合成ゼオライトA-4,粒状(富士フイルム和光純薬株式会社)100g(0.50~1.18mm)を投入し、10分間、23℃にて攪拌機(スリーワンモータ攪拌機BL3000:新東科学株式会社)で400回転/分で攪拌させカリウムイオンを吸着させナトリウムイオンに交換した。その後、減圧濾過して、調整コーヒー液(Brix:1.4%、pH:7.1)を得た。

コーヒーを毎日1杯以上飲用する習慣がある専門パネリスト10名が、ブラインドテストにて、キレ、コク、苦味、酸味の程度を評価した。なお、キレとは、後味の消失に要する時間の短さとした。コクとは、飲用時に感じるボディ(重厚感)とした。キレ、コク、苦味、酸味の程度については、0から10までの11段階(0~10点、評点が高いほど程度が強い)で評価し、その平均値を求めた。当該程度の評価は、リファレンス(具体的には、キレの程度が0点の所定のコーヒーA0、キレの程度が10点の所定のコーヒーA10、コクの程度が0点の所定のコーヒーB0、コクの程度が10点の所定のコーヒーB10、苦味の程度が0点の所定のコーヒーC0、苦味の程度が10点の所定のコーヒーC10、酸味の程度が0点の所定のコーヒーD0、酸味の程度が10点の所定のコーヒーD10)との対比により行った。さらに、当該専門パネリストにコーヒーとしての飲用適性(呈味の観点から、一般的なコーヒーとして認識できること)についても回答させた。

比較例1及び実施例1~3の調整コーヒーは、いずれも、カリウムイオン及びナトリウムイオンの濃度が低減されていた。比較例2の調整コーヒーは、実施例1~3と同等以下のカリウムイオン濃度であったことに対し、カリウムイオンと置換されたナトリウムイオンが大量に含まれていた。比較例2の調整コーヒーについては、パネリスト全員がコーヒーとしての飲用適性がないと回答し、全員が、当該回答の理由として強い塩味を指摘した(一方、収斂味についての指摘は無かった)。
比較例1~2及び実施例1~3の調整コーヒーの中でも、比較例1の調整コーヒーについては、苦味の増大も認められた。さらに、比較例1の調整コーヒーについては、パネリストのうち8名がコーヒーとしての飲用適性がないと回答し、そのうち、5名が、当該回答の理由として収斂味の増大の程度が顕著であることを挙げた。つまり、比較例1の調整コーヒーについては、飲用者によっては、収斂味の増強が、コーヒーとしての飲用適性を毀損するほど顕著であった。比較例1の調整コーヒーは、他の調整コーヒーに比べてカルシウムイオンの濃度が高いことから、収斂味をはじめとする呈味の悪化は、ミネラルそのものによる呈味、及びコーヒーの風味に影響を与えている多種多様な有機酸類がカルシウムイオンと結合することで生じた塩による呈味の、いずれか又は両方に原因があると考えられる。
これに対し、実施例1~3の調整コーヒーは、カルシウムイオンの濃度も低減されており、現に、収斂味の増大が認められなかった。また、実施例1~3の調整コーヒーは、参考例1と対比して酸味も大幅に低減していた。さらに、実施例1~3の調整コーヒーは、キレが顕著に向上していた。
実施例1~3の調整コーヒーの中でも、上清L2を用いて調製された実施例2、3の調整コーヒーでは、実施例1よりもコクが向上し、参考例1よりも苦味が低減した。特に、澱Pを再混合して調製された実施例3の調整コーヒーでは、参考例1と同等までコクが回復し、また、澱Pの再混合により苦味の増大が予測されたものの、予想外にも苦味がより一層低減した。
実施例1~3の調整コーヒーの中でも、実施例1、3の調整コーヒーでは、カルシウムイオン濃度が極めて低い実施例2よりもキレが向上しており、且つ、コーヒー本来の酸味も適度に残存していた。
実施例1~3の調整コーヒーは、比較例1及び参考例2の調整コーヒーと比べて、無水カフェイン濃度に大差ない一方で、クロロゲン酸及びキナ酸の濃度が顕著に低減されていた。
実施例1~3の調整コーヒーの、コーヒーとしての飲用適性については、実施例1で7人が肯定し、実施例2、3に至っては9人が肯定した。(なお、当然ながら、参考例1のコーヒーについて、全員がコーヒーとしての飲用適性を肯定した。)つまり、実施例1~3の調整コーヒーは、低カリウムでありながら、ナトリウムも低減され、且つ、顕著な収斂味の原因となり得る高濃度のカルシウムを伴わず、無水カフェインの量をほぼ維持しながらクロロゲン酸及びキナ酸を大幅に減少させたことで、キレを向上させ酸味を減少させる等の風味が制御され、総合的に、一般的なコーヒーと認識できる呈味を実現できたと考えられる。
[実施例4]
[1]H形強酸性陽イオン交換樹脂での処理温度とカリウムイオン低減効果
参考例1で用いた冷凍コーヒーエキス(-20℃で1年冷凍保存したもの)を解凍して水で希釈し、コーヒー抽出液L1(Brix値、pH、K+濃度、及びNa+濃度は、表2に示す通り)を調製した。300mLビーカーに44g(57mL)のコンディショニング済みH形強酸性陽イオン交換樹脂(アンバーライトTMFPC240 H:オルガノ株式会社)を入れ、スポイトを用いて可能な限り純水を除去した後、表2に示す各反応温度に調温したコーヒー抽出液L1を250g注いだ。パラフィンフィルムで蓋をしたビーカーを表2に示す各反応温度に調温したウォーターバスに浸し、攪拌機(スリーワンモータ攪拌機BL3000:新東科学株式会社)を用いて10分間攪拌(回転速度:400rpm)し、目開き150μmの篩(実用新案型ふるい:株式会社飯田製作所)に通すことで、分離液L3を得た。その後、分離液L3をそれぞれ常温になるまで静置し測定したBrix値、pH、K+濃度、及びNa+濃度を表2に示す。

参考例1で用いた冷凍コーヒーエキス(-20℃で1年冷凍保存したもの)を解凍して水で希釈し、コーヒー抽出液L1(Brix値、pH、K+濃度、及びNa+濃度は、表2に示す通り)を調製した。300mLビーカーに44g(57mL)のコンディショニング済みH形強酸性陽イオン交換樹脂(アンバーライトTMFPC240 H:オルガノ株式会社)を入れ、スポイトを用いて可能な限り純水を除去した後、表2に示す各反応温度に調温したコーヒー抽出液L1を250g注いだ。パラフィンフィルムで蓋をしたビーカーを表2に示す各反応温度に調温したウォーターバスに浸し、攪拌機(スリーワンモータ攪拌機BL3000:新東科学株式会社)を用いて10分間攪拌(回転速度:400rpm)し、目開き150μmの篩(実用新案型ふるい:株式会社飯田製作所)に通すことで、分離液L3を得た。その後、分離液L3をそれぞれ常温になるまで静置し測定したBrix値、pH、K+濃度、及びNa+濃度を表2に示す。
表2に示す通り、H形強酸性陽イオン交換樹脂で処理されるコーヒー抽出液L1の温度が低いほど、イオン交換効率が良くなる(分離液L3のカリウムイオン濃度が低くなる)傾向が認められた。一般的に、処理対象液の温度が高いほどイオン交換効率が良くなるため、表2で認められた温度が低いほどイオン交換効率が良くなる効果は、コーヒー抽出液L1をH形強酸性陽イオン交換樹脂で処理する場合に特有の効果であることが判った。
[2]塩基性陰イオン交換樹脂での処理温度とpH上昇効果
H形強酸性陽イオン交換樹脂(アンバーライトTMFPC240 H:オルガノ株式会社)が15wt%の割合となるように、コーヒー抽出液L1(本実施例4の上記[1]で用いたコーヒー抽出液L1と同じ)と混合し、攪拌機(スリーワンモータ攪拌機BL3000:新東科学株式会社)を用いて常温で10分間攪拌(回転速度:400rpm)し、目開き150μmの篩(実用新案型ふるい:株式会社飯田製作所)に通すことで樹脂を除去し、分離液L3(常温時のpH:2.4,Brix:23%,K+:75ppm)を得た。
H形強酸性陽イオン交換樹脂(アンバーライトTMFPC240 H:オルガノ株式会社)が15wt%の割合となるように、コーヒー抽出液L1(本実施例4の上記[1]で用いたコーヒー抽出液L1と同じ)と混合し、攪拌機(スリーワンモータ攪拌機BL3000:新東科学株式会社)を用いて常温で10分間攪拌(回転速度:400rpm)し、目開き150μmの篩(実用新案型ふるい:株式会社飯田製作所)に通すことで樹脂を除去し、分離液L3(常温時のpH:2.4,Brix:23%,K+:75ppm)を得た。
300mLビーカーに45g(68mL)のコンディショニング済み弱塩基性陰イオン交換樹脂(アンバーライトTMFPA53:オルガノ株式会社)を入れ、スポイトを用いて可能な限り純水を除去した後、表3に示す反応温度に調温した分離液L3を200g注いだ。パラフィンフィルムで蓋をしたビーカーを、表3に示す反応温度に調温したウォーターバスに浸し、攪拌機(スリーワンモータ攪拌機BL3000:新東科学株式会社)を用いて1時間攪拌(回転速度:400rpm)し、目開き150μmの篩(実用新案型ふるい:株式会社飯田製作所)に通すことで、分離液L4を得た。その後、分離液L4をそれぞれ常温になるまで静置し、測定したBrix及びpHを表3に記載する。
表3に示す通り、塩基性陰イオン交換樹脂で処理される分離液L3の温度が5~40℃である場合、当該温度が高いほど、効率的にpHが上昇(分離液L4のpHが上昇)し、40℃より高い温度では、pHの上昇が頭打ちとなった。この結果は、塩基性陰イオン交換樹脂で処理される分離液L3の温度が40℃程度までの温度である場合、当該温度が高いほど、先のH形強酸性陽イオン交換樹脂処理で低下したpHの回復(pHの上昇)に必要な塩基性陰イオン交換樹脂の量が少なくて済むことを示している。さらに、塩基性陰イオン交換樹脂で処理される分離液L3の温度が80℃の場合に比べ、5~40℃である場合の方が、塩基性陰イオン交換樹脂による可溶性固形分の吸着(分離液L4のBrix値の低下)を抑制できることも判った。
[参考例2]
[1]参考例1で用いた解凍したコーヒーエキスを水で希釈し、コーヒー抽出液L1(pH:4.8,Brix:1.4%,K+:413ppm)を得た。50gのコーヒー抽出液L1と、各種所定量のH形強酸性陽イオン交換樹脂(アンバーライトTMFPC240 H:オルガノ株式会社)とを混合し、磁気撹拌機[マグネチックスターラー(多連式)SM-60N:増田理化工業株式会社]を用いて10分間撹拌(回転速度:400rpm)し、100メッシュ篩でろ過することで、各種分離液L3を得た。得られた各種分離液L3の、pH、Brix、K+濃度を計測した。結果を表4及び図1に示す。

[2]参考例1で用いた解凍したコーヒーエキスを水で希釈し、コーヒー抽出液L1(pH:4.8,Brix:30%,K+:9931ppm)を得た。50gのコーヒー抽出液L1と、各種所定量のH形強酸性陽イオン交換樹脂(アンバーライトTMFPC240 H:オルガノ株式会社)とを混合し、磁気撹拌機[マグネチックスターラー(多連式)SM-60N:増田理化工業株式会社]を用いて10分間撹拌(回転速度:400rpm)し、100メッシュ篩でろ過することで、各種分離液L3を得た。得られた各種分離液L3の、pH、Brix、K+濃度を計測した。結果を表5及び図2に示す。
図1及び図2に示すように、H形酸性陽イオン交換樹脂に供するコーヒー抽出液L1のBrix値及び使用するH形酸性陽イオン交換樹脂に応じて、H形酸性陽イオン交換樹脂の使用量と分離液L3中のカリウムイオン量との関係を取得できる。同様に、H形酸性陽イオン交換樹脂に供する上清L2のBrix値及び使用するH形酸性陽イオン交換樹脂に応じて、H形酸性陽イオン交換樹脂の使用量と分離液L3中のカリウムイオン量との関係を取得できる。このようにして得られるデータから算出した近似直線に基づいて、求められるカリウム低減のレベルに応じてH形酸性陽イオン交換樹脂の使用量を決定できる。
[参考例3]
[1]参考例1で用いた解凍したコーヒーエキスを水で希釈し、コーヒー抽出液L1(pH:4.8,Brix:1.4%)1Lを得た。コンディショニング済みのH形強酸性陽イオン交換樹脂(アンバーライトTMFPC240 H:オルガノ株式会社)を、1.2wt%の割合となるようにコーヒー抽出液L1と混合し、攪拌機(スリーワンモータ攪拌機BL3000:新東科学株式会社)を用いて常温で10分間攪拌(回転速度:1000rpm)し、目開き150μmの篩(実用新案型ふるい:株式会社飯田製作所)に通すことで樹脂を除去し、分離液L3(pH:2.9,Brix:1.3%)を得た。

100mLトールビーカーに、各種所定量のコンディショニング済み弱塩基性陰イオン交換樹脂(アンバーライトTMFPA53:オルガノ株式会社)を入れ、スポイトを用いて可能な限り純水を除去した後、常温の分離液L3を50g注いだ。磁気撹拌機[マグネチックスターラー(多連式)SM-60N:増田理化工業株式会社]を用いて1時間撹拌(回転速度:400rpm)し、目開き150μmの篩(実用新案型ふるい:株式会社飯田製作所)に通すことで各種分離液L4を得た。得られた各種分離液L4のpH及びBrix値を計測した。結果を表6及び図3に示す。
[2]参考例1で用いた解凍したコーヒーエキスを水で希釈し、コーヒー抽出液L1(pH:4.8,Brix:33%)1Lを得た。コンディショニング済みのH形強酸性陽イオン交換樹脂(アンバーライトTMFPC240 H:オルガノ株式会社)を、16.7wt%の割合となるようにコーヒー抽出液L1と混合し、攪拌機(スリーワンモータ攪拌機BL3000:新東科学株式会社)を用いて常温で10分間攪拌(回転速度:1000rpm)し、目開き150μmの篩(実用新案型ふるい:株式会社飯田製作所)に通すことで樹脂を除去し、分離液L3(pH:2.4,Brix:28%)を得た。
100mLトールビーカーに、各種所定量のコンディショニング済み弱塩基性陰イオン交換樹脂(アンバーライトTMFPA53:オルガノ株式会社)を入れ、スポイトを用いて可能な限り純水を除去した後、常温の分離液L3を50g注いだ。磁気撹拌機[マグネチックスターラー(多連式)SM-60N:増田理化工業株式会社]を用いて1時間撹拌(回転速度:400rpm)し、目開き150μmの篩(実用新案型ふるい:株式会社飯田製作所)に通すことで各種分離液L4を得た。得られた各種分離液L4のpH及びBrix値を計測した。結果を表7及び図4に示す。
図3及び図4に示すように、塩基性陰イオン交換樹脂に供する分離液L3のBrix値及び使用する塩基性陰イオン交換樹脂に応じて、塩基性陰イオン交換樹脂の使用量と分離液L4のpHとの関係を取得できる。このようにして得られるデータから算出した近似直線に基づいて、求められるpH上昇のレベルに応じて塩基性陰イオン交換樹脂の使用量を決定できる。
Claims (12)
- コーヒー抽出液L1又はコーヒー抽出液の上清L2を、H形酸性陽イオン交換樹脂と接触させ、分離液L3を得る工程Aと、
前記分離液L3を、塩基性陰イオン交換樹脂と接触させ、分離液L4を得る工程Bと、を含む、調整コーヒーの製造方法。 - 前記分離液L4と、コーヒー抽出液の澱Pとを混合し、混合分離液L5を得る工程Cをさらに含む、請求項1に記載の製造方法。
- コーヒー抽出液を固液分離する工程Dをさらに含み、前記澱Pが前記工程Dによって得られるものである、請求項2に記載の製造方法。
- コーヒー抽出液を固液分離する工程Dをさらに含み、前記上清L2が前記工程Dによって得られるものである、請求項1又は2に記載の製造方法。
- 前記コーヒー抽出液L1又は前記上清L2のBrix値が20~55%であり、
前記分離液L3中のカリウムイオンの濃度が50~6300ppmである、請求項1又は2に記載の製造方法。 - 前記コーヒー抽出液L1又は前記上清L2のBrix値が0.4~4%であり、
前記分離液L3中のカリウムイオンの濃度が0~270ppmである、請求項1又は2に記載の製造方法。 - 前記分離液L4又は前記混合分離液L5を、希釈、濃縮、殺菌、及び乾燥の少なくともいずれかの処理に供する工程Eをさらに含む、請求項1又は2に記載の製造方法。
- 前記工程Aにおいて、前記上清L2の温度が0℃超25℃以下である、請求項1又は2に記載の製造方法。
- 前記工程Bにおいて、前記分離液L3の温度が20~95℃である、請求項1又は2に記載の製造方法。
- 請求項1又は2に記載の製造方法によって得られる、調整コーヒー。
- 調整コーヒーであって、
カリウムイオンの濃度が0~300ppm、
ナトリウムイオンの濃度が0~15ppm、
カルシウムイオンの濃度が0~20ppm、並びに
クロロゲン酸の濃度が1~20ppm及び/又はキナ酸の濃度が50~350ppmである、調整コーヒー。 - 前記成分組成において、前記カルシウムの濃度が10~20ppmである、請求項11に記載の調整コーヒー。
