Description
500mgのラクトフェリン(Armor proteines)を5mLのミリポア水に溶解させ、500mgのオステオポンチン(Lacprodan OPN−10,Arla)を別の5mLのミリポア水に溶解させた。2つの溶液を15mLチューブ内で組み合わせて振盪し、15分間静置した。0.3192gのFeSO4×7H2O(メルク社)を秤量して15mLチューブに入れ、10mLのミリポア水を添加して十分混合することによって、鉄の溶液を調製した。200μLの鉄溶液(1280μg Fe)をラクトフェリン及びオステオポンチンの混合物に添加し、15分間静置した。
5mLのミリポア水に溶解させた1000mgのラクトフェリンを、5mLのミリポア水に溶解させた100mgのオステオポンチンと組み合わせたことを除いて、実施例1の手順を繰り返した。約935mgの粉末を得た。Fe含有量は約1.5mg Fe/g粉末であった。ラクトフェリン−オステオポンチン−鉄複合体の存在は、HPLC−ICPMSを使用してサイズ排除クロマトグラフィーにより確認した。
バナナピュレ−を15%、イチゴピュレ−を10%含有する市販のヨーグルト、Nestle Jogolino(商標)イチゴ/バナナヨーグルトを、下の表に報告されるように種々の鉄含有材料を5kgのヨーグルトに添加することによって鉄強化した。量は、ヨーグルト100g当たり約0.8mgの鉄が提供されるように選択した。そのような量の鉄を含むヨーグルトを100g摂取すれば、乳児に推奨される鉄の1日量の15%が提供される[Official Journal of the European Union,Commission Directive 2006/125/EC]。
種々の鉄含有化合物で強化したヨーグルトにおける鉄のバイオアクセシビリティを、in vitro消化を組み合わせたCaco−2細胞を用いて測定した[R.P.Glahn et al.,Journal of Food Science,64(5),925−928.(1999)]。すべてのヨーグルトにおける鉄の量は100μg/gであった。
Claims (14)
- 鉄欠乏症の治療又は予防における使用のための、少なくとも2g/kgのラクトフェリン−オステオポンチン−鉄複合体を含む組成物。
- 前記複合体におけるラクトフェリンとオステオポンチンの比が重量で6.6:1〜2.2:1である、請求項1に記載の使用のための組成物。
- 経口又は経腸投与するための、請求項1又は2に記載の使用のための組成物。
- 早産児又は低出生体重児に投与するための、請求項1〜3のいずれか一項に記載の使用のための組成物。
- 妊娠中又は授乳中の女性に投与するための、請求項1〜3のいずれか一項に記載の使用のための組成物。
- 少なくとも2g/kgのラクトフェリン−オステオポンチン−鉄複合体を含む強化食品。
- 前記複合体におけるラクトフェリンとオステオポンチンの比が重量で6.6:1〜2.2:1である、請求項6に記載の強化食品。
- 前記食品が、乳製品;料理用製品;乳児用食品;妊婦又は出産後間もない母親用の食品、飲料;ビスケット、ケーキ若しくはペーストリー製品;デザート;栄養配合物、又はペット食品である、請求項6又は7に記載の強化食品。
- 105℃での2分の熱処理の後、ΔEab*として測定される強化食品の変色が3.5未満である、請求項6〜8のいずれか一項に記載の強化食品。
- 食品を鉄で強化するための方法であって、水溶液中に存在するラクトフェリン、オステオポンチン及び鉄を組み合わせることによってラクトフェリン−オステオポンチン−鉄複合体を形成するステップと、食品を調製するステップと、前記ラクトフェリン−オステオポンチン−鉄複合体を前記食品に添加するステップと、を含み、前記複合体におけるラクトフェリンとオステオポンチンの比が重量で4.4:1〜2.2:1である、方法。
- 前記ラクトフェリン−オステオポンチン−鉄複合体を乾燥させて粉末を形成するステップをさらに含む、請求項10に記載の方法。
- 食品を鉄で強化するための、ラクトフェリン−オステオポンチン−鉄複合体の使用であって、前記複合体におけるラクトフェリンとオステオポンチンの比が重量で4.4:1〜2.2:1である使用。
- 前記食品が果実を含む、請求項12に記載の使用。
- 前記食品がフルーツピューレ又はフルーツヨーグルトである、請求項12又は13に記載の使用。
