Claims (2)
- オリーブの木を破砕して得られる木質チップを粉状に粉砕して平均粒径が2〜3mmである原料粉を生成する粉砕工程と、前記原料粉を粉砕の前後で水蒸気処理を行うことなく乾燥させる乾燥工程と、前記乾燥工程で乾燥させた前記原料粉を、結合剤を添加することなくプレスすることにより一体化するプレス工程とを備え、
前記プレス工程のプレス圧力が90〜180MPaであるスモークウッドの製造方法。 - オリーブの木を破砕して得られる木質チップを粉状に粉砕して生成された平均粒径が2〜3mmの原料粉を粉砕の前後で水蒸気処理を行うことなく乾燥させた後、結合剤を添加することなく90〜180MPaのプレス圧力でプレスすることにより一体化して得られたスモークウッドを用いて食品を燻製処理する燻製食品の製造方法。
