成分とする被覆剤を用いて卵殻を被覆する鳥卵の保存方
法に関するものである。

を見出すため鋭意研究の結果、一般にはアセチンファツ
トと呼称されている化合物において、従来文献などで発
表されているいわゆるグリセリンジアセトモノ脂肪酸エ
ステルではなく、これまで特に重視されることの無かっ
たグリセリンモノアセトモノ脂肪酸エステル、及びグリ
セリンモノアセトジ脂肪酸エステルが鳥卵の鮮度保持効
果に極めて優れていること、並びに当該脂肪酸が炭素数
12以下の中〜短鎖飽和脂肪酸からなるもの及び炭素数
8〜22の不飽和脂肪酸からなものは常温で液体であり
、炭素数14以上の飽和脂肪酸からなるものは融点を有
するものの、前述の液体エステル、液状油脂または水に
溶解、分散、乳化せしめることにより本願の目的に適合
することを知り、本願を完成した。
