の発明は、このようなシート状加工食品の製造方

お節等の魚介類を薄く切り、これに少量の固結剤
を加えてプレス機によりブロツク状にプレスした
後、このブロツクをスライサにより厚さ0.2mm程
度のシート状にスライスしたものである(特願昭

で、だしとして使用する場合は鍋の中でばらばら

固結剤を添加してよく混ぜ合わせ、プレス機によ
つてブロツク状にプレスした後、このブロツクを
スライサにより所望の厚さ、例えば2mm程度のシ
ートにスライスする。なお、上記の食用たんぱく
質を主成分とする固結剤としては、例えば千葉製
粉株式会社から従来からパールミントMX−30と
いう商品名で市販されている食品加工用たんぱく
質を用いることができる。これは、動物性、植物
性たんぱく質及びその抽出物を56%、食塩、動物
性骨殻及びその抽出物を25%、多糖類及びその分

対して約5パーセントの重量の上記の食用たんぱ
く質を主成分とする固結剤を添加して混合し、そ
の6.5Kgをプレス機にかけて70Kg/cm2の圧力でプ
レスし、20cm×20cm×10cmのブロツクに固結させ
る。これをスライサによつてスライスして20cm×
20cm×2mmのかつお節シートを作る。このかつお
節シート2枚の間に固形みそを挾み込んで軽くプ
レスして製品とする。第1図はこのようにして得
られたこの発明の板状加工食品の断面図で、1,
2は上記のようにして作られた20cm×20cm×2mm
のかつお節シートで、その間に固形みそ3がサン
ドイツチ状に挾み込まれている。みそ3の中に乾
燥ねぎ、わかめ等の具を混入しておけば一層手軽
にみそ汁を作ることが出来る。具として使用する
場合は、この板状の製品を適当な寸法の角または
短冊状、その他の形に切つたものを湯の中に入
れ、それをそのまゝ残しておけばよい。だしとし
て使用する場合は、充分にだしが出たところで、
そのシートを引出せばよい。第2図はかつお節シ
ート10の一面に固形みそ30を塗布したこの発
