Description

【発明の詳細な説明】[Detailed description of the invention]

本発明は焼海苔粉末を主体とした成形食品に関
するものである。 一般に海苔類に関する食品は、薄い紙片状に掬
いて乾燥した所謂焼海苔用のもの、あるいはこれ
を予め味つけして焼いた所謂味付け海苔等が知ら
れているが、その他についてはあまり汎用性のあ
る商品となるものは見られていない。 しかし海苔はその独特の風味から広く一般に親
しみを持たれている食品であることから、その風
味を生かして近年の食生活の多様化に対応した新
たな形態の食品を提供することは、極めて望まし
いものであると言える。 本発明はこのような観点から、従来の海苔食品
とはその形態を全く異にする新たな成形食品を提
供するものであり、具体的には粉状又は小片状の
焼海苔を主体とし、これにフリーズドライとした
動物性・植物性のタンパク質の粒状物、及びこれ
らのバインダーとしての作用も有する調味料を添
加した混合物を型枠内で加圧・加熱成形してなる
ものである。 尚、添加する調味料は、海苔が水分によつて変
質を受け易いという点から非水分のものを用いる
ことがよく、また成形時の加熱は主体とする海苔
を既に成形前に一度130℃前後で焼いたものを用
いることから、再加熱により海苔が焦げて変質す
ることのないように100℃以下で行なうことが望
ましい。 実施例 予め焼いた海苔を粉状ないし小片状に軽く粉砕
したものを5g、動物性タンパク質としての鶏
肉、及び植物性タンパク質としてホウレン草をフ
リーズドライとした粒状物を2g、調味料として
梅肉を3gを合せて混合し、これを所定の型枠に
充填した後、50Kg/cm2、100℃で加圧・加熱成形
した。 以上の工程の概略を示すと次の通りである。

その実益は極めて大なるものである。
