本発明は豆腐の製造方法に係り、詳しくは凝固
箱で凝固させた絹ごし豆腐をそのまま裁断し加熱
することによつて、形崩れのしない、かつ日もち
の良い絹ごし豆腐を能率良く製造できる豆腐の製

[従来の技術]
絹ごし豆腐は製品の外観および舌ざわりが木綿
豆腐に比較して滑らかで、断面も卵豆腐にように
きめこまかく美しいところから名付けられたもの
である。絹ごし豆腐は豆乳をゲル状に固めた豆腐
で、豆乳の中の水分をそのまま型箱に入れて脱水
することなく凝固剤で固めたものである。このよ
うに絹ごし豆腐は豆乳をそのまま寒天を以て寄せ
るようにゲル状に固めるため、豆乳自体を相当に
濃厚にし、しかも手早く強烈な撹拌を伴うヨセ込
みを行い、さらに不十分なときは、凝固補助剤が
添加される。このような方法で凝固された絹ごし
豆腐は、いずれにしても豆乳をそのままゲル状に
固めるものであるため、木綿豆腐のように脱水プ
レスをしないので、木綿豆腐に比較して軟弱で形
崩れしやすく取り扱いに注意を要し、さらには強
烈な攪拌を伴うヨセ込みを行うものの、型箱中で
凝固させるため、どうしても未反応の豆乳と凝固
剤が残留し豆腐がまずくなるという問題点があ

ること、および凝固剤が未反応のまま残留するこ
と等の前記のごとき問題点に鑑みてなされたもの
で、未反応の凝固剤を反応させると共に、型箱か
ら取り出した後の取り扱いによつて形崩れしない
程度に丈夫な絹ごし豆腐を得ることのできる絹ご

完全に反応させると共に、豆腐の身を引き締めて
凝固箱から取り出して後の取り扱いにおいても容
易に形崩れしない丈夫な絹ごし豆腐を得ることが
できるという効果がある。また、凝固箱に入れた
ままで豆腐を裁断しそのまま加熱するので、一度
に多数の豆腐を加熱できるので、作業能率におい
