ダブルエツジ(双刃)刃物とが存する。しかし
て、刃鋼鈑材の露出部分が多いので、刃先の切れ
味、切り込みの効果がよいという長所を持つてい
る反面、刃先が脆くて欠け易く、また刃が研ぎ難
いという短所をもつている。他方、ダブルエツジ
刃物においては、軟鋼鈑材の被覆部分が多いの
で、刃欠けが生じ難く、また刃も研ぎ易いという
長所を持つている反面、刃鋼材でサンドイツチ状
に挟まれているので、シングルエツジ刃物に較
べ、刃の切れ味・切り込みが劣るという問題点が
あつた。

によつて後退され、切取りに必要な幅量だけ刃鋼
層1′が露出するのである。
